Description

These homemade Cosmic Brownies are even better than the nostalgic Little Debbie classic! With a dense, chewy texture, rich chocolate frosting, and signature candy-coated sprinkles, they bring back all the childhood memories—without the preservatives. This easy, one-bowl recipe creates a fudgy, indulgent brownie that’s perfect for any chocolate lover!

Ingredients

Scale

For the Brownies:

  • 1 cup (226g) unsalted butter, melted
  • 1 ¼ cups (250g) granulated sugar
  • ½ cup (100g) brown sugar (for extra chewiness)
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup (120g) all-purpose flour
  • ¾ cup (75g) unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ cup (120ml) heavy cream (adds moisture)

For the Chocolate Frosting:

  • ½ cup (120ml) heavy cream
  • 1 ½ cups (270g) semisweet chocolate chips
  • 1 tablespoon butter
  • ½ teaspoon vanilla extract

For the Topping:

  • ¼ cup candy-coated chocolate chips (mini M&M’s or similar sprinkles)

Instructions

Step 1: Prepare the Brownie Batter

  1. Preheat your oven to 325°F (163°C). Grease and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
  3. Add the eggs and vanilla extract, mixing until fully incorporated.
  4. Sift in the flour, cocoa powder, and salt, then stir until just combined (avoid overmixing for a chewy texture).
  5. Pour the batter into the prepared pan and smooth the top.

Step 2: Bake the Brownies

  1. Bake for 25-30 minutes, or until the edges are set and the center is slightly soft.
  2. Let the brownies cool completely before adding the frosting.

Step 3: Make the Chocolate Frosting

  1. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
  2. Remove from heat and add the chocolate chips, butter, and vanilla extract. Stir until smooth and glossy.
  3. Let the frosting cool slightly before pouring over the brownies.

Step 4: Add the Signature Cosmic Sprinkles

  1. Pour the warm chocolate frosting over the cooled brownies, spreading evenly.
  2. Immediately sprinkle mini candy-coated chocolates on top.
  3. Let the brownies sit at room temperature until the frosting sets.

Step 5: Slice and Enjoy

  1. Once the frosting is firm, cut the brownies into 8-12 squares and serve!

Notes

  • For extra chewiness, refrigerate the brownies for 1 hour before serving.
  • Use Dutch-processed cocoa for a richer chocolate flavor.
  • Store in an airtight container at room temperature for 3-4 days or refrigerate for up to a week.
  • To make a gluten-free version, substitute almond flour or a gluten-free baking mix.

  • To make them vegan, use flax eggs, dairy-free chocolate, and plant-based butter.
