Instructions
Step 1: Prepare the Brownie Batter
- Preheat your oven to 325°F (163°C). Grease and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
- Add the eggs and vanilla extract, mixing until fully incorporated.
- Sift in the flour, cocoa powder, and salt, then stir until just combined (avoid overmixing for a chewy texture).
- Pour the batter into the prepared pan and smooth the top.
Step 2: Bake the Brownies
- Bake for 25-30 minutes, or until the edges are set and the center is slightly soft.
- Let the brownies cool completely before adding the frosting.
Step 3: Make the Chocolate Frosting
- In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
- Remove from heat and add the chocolate chips, butter, and vanilla extract. Stir until smooth and glossy.
- Let the frosting cool slightly before pouring over the brownies.
Step 4: Add the Signature Cosmic Sprinkles
- Pour the warm chocolate frosting over the cooled brownies, spreading evenly.
- Immediately sprinkle mini candy-coated chocolates on top.
- Let the brownies sit at room temperature until the frosting sets.
Step 5: Slice and Enjoy
- Once the frosting is firm, cut the brownies into 8-12 squares and serve!
Notes
- For extra chewiness, refrigerate the brownies for 1 hour before serving.
- Use Dutch-processed cocoa for a richer chocolate flavor.
- Store in an airtight container at room temperature for 3-4 days or refrigerate for up to a week.
- To make a gluten-free version, substitute almond flour or a gluten-free baking mix.
- To make them vegan, use flax eggs, dairy-free chocolate, and plant-based butter.
