Ingredients
Main Ingredients:
- 1 lb Italian sausage (mild or spicy)
- 1 tbsp olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 Parmesan rind (optional, for extra depth of flavor)
- 1 can (14.5 oz) diced tomatoes (or 2 fresh tomatoes, diced)
- 2 cups fresh spinach or kale, chopped
- 1 tsp Italian seasoning (oregano, basil, thyme blend)
- ½ tsp crushed red pepper flakes (optional, for spice)
- Salt & black pepper, to taste
For Thickening (Optional):
- 2 tbsp butter
- 2 tbsp all-purpose flour OR 1 tbsp cornstarch mixed with 2 tbsp water
Instructions
Step 1: Prepare Your Ingredients
- Chop the onion, mince the garlic, and dice fresh tomatoes if using them instead of canned.
- Grate the Parmesan cheese if not using pre-grated.
- Remove sausage from casing if using raw sausage.
Step 2: Cook the Italian Sausage
- Heat a large pot or Dutch oven over medium-high heat.
- Add 1 tbsp of olive oil, then add the Italian sausage.
- Break up the sausage with a wooden spoon and cook for 5-7 minutes, until browned.
- Remove sausage from the pot and set aside on a plate. If there’s excess grease, drain some fat, leaving about 1 tbsp for flavor.
Step 3: Sauté the Aromatics
- In the same pot, add the chopped onion and cook for 2-3 minutes until soft.
- Stir in minced garlic and cook for another 30 seconds, until fragrant.
- (Optional) Add crushed red pepper flakes for extra heat.
Step 4: Build the Flavor Base
- Pour in the chicken broth, stirring to deglaze the pot.
- Add the diced tomatoes, Italian seasoning, salt, and black pepper.
- Bring everything to a gentle simmer for 5 minutes to blend flavors.
Step 5: Add the Creamy Elements
- Lower the heat to medium-low and pour in the heavy cream, stirring well.
- Add the cooked sausage back to the pot and mix everything together.
- If using a Parmesan rind, drop it in now for extra umami flavor.
Step 6: Add Greens and Cheese
- Stir in chopped spinach or kale and let it wilt for about 2 minutes.
- Gradually add grated Parmesan cheese, stirring constantly so it melts smoothly into the soup.
- If the soup seems too thin, let it simmer uncovered for 5-10 more minutes to thicken naturally.
Step 7: Final Taste Test & Adjustments
- Taste and adjust seasoning as needed. Add more salt, black pepper, or Parmesan to taste.
- Remove and discard the Parmesan rind if used.
Step 8: Serve & Enjoy!
- Ladle into bowls and garnish with extra Parmesan cheese and fresh basil.
- Serve with warm, crusty bread or garlic breadsticks for dipping.
- Pair with a glass of red or white wine for an elevated meal experience!
Notes
✔ Want a healthier version? Swap heavy cream for half-and-half or coconut milk (for a dairy-free option).
✔ Prefer it spicier? Use spicy Italian sausage and add extra crushed red pepper flakes.
✔ Need a thicker soup? Add a butter & flour roux or a cornstarch slurry for a velvety texture.
✔ Looking for low-carb? Skip the flour and serve with cauliflower rice or zoodles instead of bread.
✔ Perfect for meal prep! This soup stores well and tastes even better the next day. Refrigerate for up to 3 days or freeze for up to 2 months.
