Ingredients

Scale

Rice Pudding

  • 3 cups cooked short-grain rice (or other cooked white rice)
  • 1 (14 oz / 396 g) can sweetened condensed milk
  • 2 cups whole milk (or substitute 1 cup milk + 1 cup heavy cream for extra richness)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup raisins (optional)

Topping

  • ½ teaspoon ground cinnamon
  • Extra sweetened condensed milk or heavy cream for drizzling (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 2-quart baking dish.
  2. In a large mixing bowl, whisk together the sweetened condensed milk, milk, eggs, vanilla extract, cinnamon, and salt until smooth.
  3. Stir in the cooked rice and raisins (if using), mixing until evenly coated.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Sprinkle the top with the additional ground cinnamon.
  6. Bake for 45–55 minutes, or until the edges are set and the center is still slightly soft. The top should be lightly golden.
  7. Remove from the oven and let the pudding rest for 10–15 minutes before serving.
  8. Serve warm for a creamy texture or refrigerate until chilled for a firmer pudding. Drizzle with extra condensed milk or cream if desired.

Notes

  • Add a pinch of ground nutmeg or cardamom for extra warmth.
  • Stir in shredded coconut for a subtle tropical variation.
  • Raisins can be substituted with dried cranberries or omitted entirely.
  • Store leftovers covered in the refrigerator for up to 4 days.
  • Reheat gently in the microwave or on the stovetop with a splash of milk to restore creaminess.
  • Delicious served warm, chilled, or topped with whipped cream, fresh berries, or toasted nuts.
