Description

Enjoy a rich, warm, and fudgy chocolate dessert in less than two minutes with this Easy Sugar-Free Chocolate Self-Saucing Mug Pudding! Made with simple pantry ingredients, sugar-free sweetener, and unsweetened cocoa powder, this single-serving treat features a soft, fluffy chocolate sponge with a delicious molten fudge sauce underneath. Prepared entirely in the microwave, it’s the perfect quick dessert for satisfying chocolate cravings without refined sugar.

Ingredients

Scale

Pudding Batter:

  • 1/4 cup (30g) self-raising flour
  • 3 tablespoons granulated sugar-free sweetener (allulose or monk fruit blend)
  • 2 tablespoons (10g) unsweetened cocoa powder
  • 1/4 cup (60ml) milk or unsweetened almond milk
  • 2 tablespoons (30ml) vegetable oil or melted butter
  • 1/4 teaspoon vanilla extract

Chocolate Sauce Layer:

  • 1 tablespoon brown sugar-free sweetener
  • 1 teaspoon unsweetened cocoa powder
  • 1/4 cup (60ml) boiling water

Instructions

  • Lightly grease a large microwave-safe mug (at least 350ml or 12.5 oz capacity) with butter or cooking spray.
  • Add the self-raising flour, granulated sugar-free sweetener, and cocoa powder directly into the mug. Whisk until evenly combined.
  • Pour in the milk, vegetable oil (or melted butter), and vanilla extract. Stir until a smooth, thick chocolate batter forms.
  • Smooth the batter evenly across the bottom of the mug.
  • Sprinkle the brown sugar-free sweetener and remaining cocoa powder evenly over the batter.
  • Slowly pour the boiling water over the back of a spoon onto the topping. Do not stir or mix.
  • Microwave on high for 90 seconds to 2 minutes, until the sponge has risen and the sauce is bubbling around the edges.
  • Carefully remove the mug from the microwave and allow it to rest for 1 minute.
  • Serve warm and enjoy the soft chocolate sponge with the rich, gooey fudge sauce underneath. Add sugar-free whipped cream or vanilla ice cream if desired.

Notes

  • Choose the right mug: Use a microwave-safe mug with at least 350ml capacity to prevent overflowing.
  • Don’t stir the sauce: Pouring boiling water gently over the back of a spoon helps preserve the distinct sponge and fudge sauce layers.
  • Microwave carefully: Cooking times vary depending on microwave wattage. Start checking at 90 seconds, especially with microwaves rated at 1000W or higher.
  • Flour substitution: Replace self-raising flour with 1/4 cup plain flour and 1/2 teaspoon baking powder.
  • Dairy-free option: Use unsweetened almond milk or coconut milk instead of regular milk.
  • Sweetener tip: Allulose gives a particularly smooth, caramel-like sauce. Check whether your monk fruit blend contains added sugar or other carbohydrates.
  • Serving suggestion: Top with sugar-free whipped cream, sugar-free vanilla ice cream, or chopped toasted nuts.
  • Storage: Best enjoyed immediately while the chocolate sauce is warm and gooey. This recipe is designed as a single-serving dessert.
