Ingredients

Scale

Chocolate Cake Batter

  • 2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar-free sweetener, such as allulose or a monk fruit blend
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/2 cup unsweetened almond milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Turtle Filling

  • 1 cup sugar-free caramel-style sauce
  • 2 tablespoons unsalted butter
  • 1/4 cup heavy whipping cream
  • 1 cup sugar-free dark chocolate chips or chunks
  • 1 cup chopped pecans

Chocolate Cream Cheese Frosting

  • 8 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup powdered sugar-free sweetener
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy whipping cream

Optional Topping

  • Extra sugar-free dark chocolate pieces, for garnish
  • Sugar-free caramel sauce, for drizzling
  • Additional chopped pecans, for sprinkling

Instructions

1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9 × 13-inch baking dish or line it with parchment paper.

2. Prepare the chocolate batter: In a large bowl, whisk together the almond flour, cocoa powder, granulated sugar-free sweetener, baking powder, and salt. Add the eggs, almond milk, melted butter, and vanilla extract. Mix until the batter is smooth and evenly combined.

3. Bake the first layer: Spread half of the chocolate batter into the prepared baking dish. Bake for 12–15 minutes, or until the surface is lightly set.

4. Prepare the caramel filling: In a small saucepan over low heat, combine the sugar-free caramel sauce, 2 tablespoons of butter, and heavy whipping cream. Stir gently until the mixture is warm and smooth.

5. Add the turtle filling: Carefully spread the warm caramel mixture over the partially baked cake layer. Sprinkle the sugar-free dark chocolate chips and chopped pecans evenly over the caramel.

6. Add the remaining batter: Spoon the remaining chocolate batter over the filling and gently spread it into an even layer, taking care not to disturb the caramel and pecans too much.

7. Finish baking: Return the dish to the oven and bake for another 20–25 minutes, or until the top layer is set and a toothpick inserted into the cake portion comes out with a few moist crumbs. Avoid testing directly through the caramel filling.

8. Cool the cake: Remove the cake from the oven and allow it to cool completely in the baking dish before frosting.

9. Make the chocolate frosting: Beat the softened cream cheese and butter together until smooth and creamy. Add the powdered sugar-free sweetener, cocoa powder, vanilla extract, and heavy whipping cream. Beat until fluffy and spreadable.

10. Frost and garnish: Spread the frosting evenly over the cooled cake. Garnish with extra sugar-free chocolate pieces, chopped pecans, or a drizzle of sugar-free caramel sauce.

11. Slice and serve: Cut into 12–16 squares and serve. For cleaner slices, refrigerate the cake briefly before cutting.

Notes

  • Choose the right sweetener: Allulose or a monk fruit blend suitable for baking works well. Sweeteners vary in sweetness and baking behavior, so follow the product’s substitution guidance.
  • Check your caramel sauce: Choose a genuinely sugar-free caramel sauce and check its nutrition label. Some products marketed as sugar-free still contain significant carbohydrates.
  • Avoid overbaking: The first cake layer should be just set. This helps keep the finished cake moist and tender.
  • Cool before frosting: Allow the cake to cool completely so the cream cheese frosting stays thick and creamy.
  • Make it nut-free: Almond flour and pecans are both nuts, so this recipe is not suitable for people with those allergies as written. A different flour and filling would require recipe testing.
  • Storage: Cover and refrigerate leftovers for 4–5 days because the frosting contains cream cheese. Let individual portions sit at room temperature for about 10 minutes before serving for a softer texture.
  • Make ahead: Bake the cake a day in advance, refrigerate it once cooled, and frost or garnish before serving if desired.
  • Serving suggestion: Pair each slice with unsweetened coffee, tea, or a spoonful of sugar-free whipped cream.
