  • Author: chef Jennifer
  • Total Time: 55 minutes
  • Yield: 6 servings 1x

Description

This Easy Sugar-Free Pineapple Bake is a warm, soft, custard-like pineapple dessert made with crushed pineapple, sugar-free sweetener, vanilla, butter, and cinnamon. It takes just 10 minutes to prepare and bakes into a tender, golden dessert with bright tropical flavor and cozy cinnamon notes. Serve it warm or chilled for holidays, family dinners, potlucks, or everyday treats.

Ingredients

Scale

Ingredients:

  • 1 can (20 oz) crushed pineapple in juice, no added sugar
  • 1/2 cup granulated sugar-free sweetener
  • 2 large eggs
  • 2 tablespoons cornstarch
  • 2 teaspoons vanilla extract
  • 1 1/2 tablespoons butter, cut into small pieces
  • 1 teaspoon ground cinnamon

Instructions

  • Preheat the oven to 350°F (175°C).
  • Grease a 9×9-inch baking dish.
  • In a large bowl, combine the crushed pineapple with its juice, sugar-free sweetener, eggs, cornstarch, and vanilla extract.
  • Stir until the mixture is smooth and fully combined.
  • Pour the pineapple mixture into the prepared baking dish.
  • Evenly distribute the butter pieces over the top.
  • Sprinkle the ground cinnamon evenly over the mixture.
  • Bake for about 45 minutes, or until the edges are golden and the center is set.
  • Remove from the oven and let cool for 10 minutes.
  • Serve warm or chilled.

Notes

  • Use crushed pineapple packed in juice rather than syrup to avoid added sugar.
  • Let the bake cool for about 10 minutes before serving so the center can firm up.
  • Store covered in the refrigerator for up to 5 days.
  • Serve warm or chilled with sugar-free whipped cream or vanilla ice cream.
  • For a tropical variation, add 1/4 cup unsweetened shredded coconut.
  • Add 1/4 teaspoon ground nutmeg for extra warmth.
  • Add 1/4 cup chopped pecans for crunch.
  • For a dairy-free version, substitute dairy-free butter.
  • The bake can be prepared a day ahead and refrigerated until serving.
  • To freeze, cool completely and freeze for up to 2 months. Thaw in the refrigerator before serving.
  • An 8×8-inch baking dish can also be used; the bake will be thicker and may require a slightly different baking time.
