  • Author: chef Jennifer
  • Total Time: 55 minutes
  • Yield: 1 (9x9-inch) baking dish 1x

Description

This Heavenly Pineapple Bake is a warm, comforting dessert with a soft, custardy center and lightly golden, buttery top. Made with crushed pineapple, eggs, sugar, cornstarch, vanilla, butter, and cinnamon, it comes together in just minutes and bakes into a sweet, tropical treat. Serve it warm with whipped cream or vanilla ice cream for an easy dessert that’s perfect for potlucks, holidays, and family gatherings.

Ingredients

Scale
  • 1 can (20 oz) crushed pineapple, with juice
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 tablespoons cornstarch
  • 2 teaspoons vanilla extract
  • 1 1/2 tablespoons butter, sliced into small pats
  • 1 teaspoon ground cinnamon
  • Whipped cream or vanilla ice cream, for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×9-inch baking dish.
  3. In a large bowl, combine the crushed pineapple with its juice, sugar, eggs, cornstarch, and vanilla extract. Mix thoroughly until smooth and the cornstarch is fully dissolved.
  4. Pour the pineapple mixture into the prepared baking dish.
  5. Dot the surface evenly with the butter pats.
  6. Sprinkle the ground cinnamon evenly over the top.
  7. Bake for about 45 minutes, or until the edges are bubbly and the top is lightly golden. The center should be set but still soft and slightly jiggly.
  8. Remove from the oven and let the bake rest for 5–10 minutes.
  9. Serve warm or chilled with whipped cream or vanilla ice cream, if desired.

Notes

  • Do not drain the crushed pineapple; the juice is essential for the soft, custardy texture.
  • Make sure the cornstarch is completely dissolved before baking to prevent lumps.
  • A 9×9-inch baking dish provides the ideal depth and helps the dessert bake evenly.
  • Avoid overbaking. The center should remain soft and slightly jiggly when removed from the oven.
  • Allow the bake to rest for 5–10 minutes before serving so it can set slightly.
  • For a tropical variation, sprinkle shredded coconut over the top before baking.
  • Add chopped pecans or walnuts for a crunchy topping.
  • For extra warmth, add a pinch of nutmeg with the cinnamon.
  • Leftovers can be covered and refrigerated for up to 3 days.
  • To freeze, cool completely, cover well, and freeze for up to 2 months. Reheat in the oven until warm and bubbly.
