Instructions

  1. Preheat the Oven
    Preheat oven to 350°F (175°C).
  2. Melt the Butter
    Place the butter in a 9×9-inch or 11×9-inch baking dish. Put the dish in the oven for 5–7 minutes until the butter is completely melted. Remove carefully and set aside.
  3. Prepare the Batter
    In a medium mixing bowl, whisk together the flour, sugar, baking powder, and salt. Stir in the buttermilk and vanilla extract until smooth. Fold in lemon zest if using. The batter will be thin.
  4. Assemble the Cobbler
    Pour the batter evenly over the melted butter. Do not stir. Spoon the lemon pie filling evenly over the batter in dollops. Again, do not stir.
  5. Bake
    Bake for 45–55 minutes, or until the top is golden brown and the edges are bubbling. The center should still have a slight jiggle.
  6. Cool Slightly
    Let the cobbler cool for 10–15 minutes before serving to allow the filling to thicken.
  7. Serve
