Description

No-Bake Strawberry Delight is a cool, creamy, and refreshing layered dessert featuring a buttery graham cracker crust, fresh strawberries, fluffy no-bake cheesecake filling, and a light whipped topping. For the Graham Cracker Crust:

For the Strawberry Layer:

  • 1/4 cup strawberries, diced (reserved for garnish)

For the No-Bake Cheesecake Layer:

  • 16 ounces cream cheese, softened (2 blocks)
  • 1 cup confectioners’ sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons fresh lemon juice
  • 1 (3-ounce) box strawberry gelatin mix
  • 3 cups whipped topping, divided

For Garnish:

  • Reserved diced strawberries
  • Whipped cream (optional)

Instructions

  • Line an 8×8-inch baking dish with parchment paper, leaving an overhang on the sides for easy removal.
  • In a medium bowl, combine the graham cracker crumbs and granulated sugar.
  • Stir in the melted butter until all crumbs are evenly coated.
  • Firmly press the mixture into the bottom of the prepared baking dish to form an even crust.
  • Arrange the sliced strawberries evenly over the crust, reserving a small portion for garnish.
  • Place the dish in the refrigerator while preparing the cheesecake filling.
  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Add the confectioners’ sugar, vanilla extract, and lemon juice. Beat until fully combined and lump-free.
  • Gently fold in 2 cups of the whipped topping until light and fluffy.
  • Spread half of the cheesecake mixture evenly over the strawberry layer.
  • Fold 1/4 cup of the strawberry gelatin mix into the remaining cheesecake mixture.
  • Spread the strawberry cheesecake layer over the plain cheesecake layer.
  • Top with the remaining 1 cup whipped topping and smooth the surface.
  • Refrigerate for at least 1 hour, or preferably overnight, until fully chilled and set.
  • Before serving, garnish with the reserved diced strawberries and optional whipped cream.
  • Slice into squares and serve cold.
