Description

A quick and refreshing no-bake lemon cream dessert made with cream cheese, heavy cream, sugar-free sweetener, and fresh lemon. It has a smooth, airy mousse-like texture with bright citrus flavor and is perfect for spring, summer, dinner parties, or an easy make-ahead treat.

  • 1/4 cup powdered sugar-free sweetener
  • 2 tbsp fresh lemon juice
  • 1 tsp finely grated lemon zest
  • 1/2 tsp vanilla extract

Instructions

  • Beat the softened cream cheese and powdered sugar-free sweetener until completely smooth and creamy.
  • Add the fresh lemon juice, lemon zest, and vanilla extract. Beat until fully combined, scraping down the sides of the bowl as needed.
  • In a separate cold bowl, whip the cold heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the lemon cream mixture using a spatula. Fold just until smooth, pale, and fluffy, taking care not to deflate the whipped cream.
  • Divide the lemon cream evenly among 4 small dessert cups.
  • Refrigerate for at least 1 hour, or longer for a firmer mousse-like texture.
  • Garnish with fresh berries, lemon zest, sugar-free whipped cream, or unsweetened coconut before serving.

  • Use softened cream cheese to prevent lumps and create a smooth base.
  • Keep the heavy cream cold for the best whipping results.
