Instructions

  • Lightly grease a 16- to 18-ounce microwave-safe mug or ramekin with butter or coconut oil.
  • Add the softened cream cheese to the mug. If needed, microwave it for 10 to 15 seconds to soften completely.
  • Add the egg and mix with a fork or small whisk until mostly smooth.
  • Add the granulated sweetener, protein powder, ground flaxseed meal, almond extract, and cinnamon.
  • Mix thoroughly until the batter is smooth and no dry lumps remain.
  • Microwave on high for 90 seconds. Check the texture, then continue microwaving in 10- to 15-second increments if needed, up to about 120 seconds total. The edges should be set while the center may still have a slight jiggle.
  • Let the mug cake rest for 1 to 2 minutes before serving. For a firmer cheesecake-like texture, allow it to cool for 5 to 10 minutes or chill it for a few hours.
  • Top with sugar-free whipped topping, chopped almonds, extra cinnamon, or a light dusting of powdered sweetener, if desired.
  • Serve warm or chilled.
