Sugar-Free Apple Cinnamon Cottage Cheese Bake

  • Author: chef Jennifer
  • Total Time: 45–50 minutes
  • Yield: 1 small baking dish, 4 servings 1x

Description

A creamy, protein-rich apple cinnamon bake made with cottage cheese, eggs, fresh apple, cinnamon, and vanilla. This easy sugar-free dessert has a soft, custard-like texture and cozy apple flavor without a flour-based batter or added sugar. Enjoy it warm for breakfast or dessert, or chill it for a convenient make-ahead snack.

Ingredients

Scale
  • 1 cup cottage cheese
  • 2 large eggs
  • 1 medium crisp apple, diced
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon granulated sugar-free sweetener
  • 1 teaspoon baking powder
  • Pinch of salt

Optional Toppings:

  • Sugar-free Greek yogurt
  • Chopped walnuts or almonds
  • Extra ground cinnamon

Instructions

  • Preheat the oven to 350°F (175°C). Lightly grease a small baking dish or line it with parchment paper.
  • Add the cottage cheese, eggs, sugar-free sweetener, cinnamon, vanilla, baking powder, and salt to a bowl.
  • Whisk until well combined. For a smoother, custard-like texture, blend the mixture until creamy.
  • Dice the apple into small pieces. If the apple is particularly juicy, pat the pieces dry with a paper towel.
  • Gently fold the diced apple into the cottage cheese mixture.
  • Pour the mixture into the prepared baking dish and spread it evenly.
  • Bake for 35–40 minutes, or until the center is set and the edges are lightly golden.
  • Remove from the oven and let the bake cool for 10–15 minutes so the center can finish setting.
  • Serve warm or chilled with sugar-free Greek yogurt, chopped nuts, and an extra sprinkle of cinnamon if desired.

Notes

  • For the smoothest texture, blend the cottage cheese mixture before adding the diced apple.
  • Use a crisp apple that holds its shape during baking.
  • Avoid overbaking; the center should be set but still gently soft.
  • Add a pinch of nutmeg, ginger, or allspice for extra warmth.
  • Substitute diced pears for the apple for a slightly softer, sweeter variation.
  • Store covered in the refrigerator for up to 5 days.
  • Serve cold for a firmer, cheesecake-like texture or gently reheat individual portions.
