These Sugar-Free Blueberry Chill Bars are creamy, refreshing no-bake treats made with a buttery almond flour crust, fluffy vanilla cream cheese filling, and bright homemade blueberry topping. For the Almond Crust

  • 1 1/2 cups almond flour
  • 3 tablespoons granulated sugar-free sweetener
  • 5 tablespoons butter, melted
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

For the Creamy Filling

  • 8 ounces cream cheese, softened
  • 1/3 cup powdered sugar-free sweetener
  • 1 teaspoon vanilla extract
  • 1 cup cold heavy whipping cream

For the Blueberry Topping

  • 2 cups fresh or frozen blueberries
  • 2 tablespoons granulated sugar-free sweetener
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  • Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  • Make the crust by mixing the almond flour, granulated sugar-free sweetener, melted butter, vanilla extract, and salt until evenly combined.
  • Press the crust firmly and evenly into the bottom of the prepared dish. Refrigerate while preparing the filling.
  • Make the blueberry topping by combining the blueberries, granulated sugar-free sweetener, lemon juice, cornstarch, and water in a small saucepan.
  • Cook over medium heat for 5–7 minutes, stirring frequently, until the blueberries soften and the mixture thickens.
  • Remove the blueberry mixture from the heat and allow it to cool completely. It will thicken further as it cools.
  • Prepare the filling by beating the softened cream cheese, powdered sugar-free sweetener, and vanilla extract until smooth.
  • In a separate bowl, whip the cold heavy cream until soft peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until light and fluffy. Avoid overmixing.
  • Spread the cream cheese filling evenly over the chilled crust.
  • Spoon the completely cooled blueberry topping over the filling.
  • Use a knife or toothpick to gently swirl the blueberry topping into the creamy layer.
  • Cover and refrigerate for at least 4 hours, preferably overnight, until firmly set.
  • Lift the chilled dessert from the pan using the parchment paper. Cut into 12 bars and serve chilled.

Notes

  • Let the blueberry topping cool completely before spreading it over the filling. A warm topping can soften the cream cheese layer.
  • Press the almond crust firmly into the pan so the bars hold together when sliced.
  • Powdered sugar-free sweetener gives the filling a smoother texture than granulated sweetener.
  • For the cleanest slices, chill overnight and wipe the knife between cuts.
  • Allulose, monk fruit, erythritol blends, or another baking-friendly sugar substitute can be used according to taste and package conversion recommendations.
  • Fresh or frozen blueberries can be used.
  • For a berry variation, replace some or all of the blueberries with raspberries, blackberries, or strawberries.
  • Add 1 teaspoon lemon zest to the filling for extra brightness.
  • For a dairy-free version, use dairy-free cream cheese and a suitable dairy-free whipping cream.
