  • 1 teaspoon vanilla extract
  • 8 ounces sugar-free whipped topping, thawed

For the Blueberry Layer

  • 2 cups fresh or frozen blueberries

  • 1/4 cup granulated sugar-free sweetener
  • 1 tablespoon cornstarch
  • 1 teaspoon fresh lemon juice

For the Topping

  • 8 ounces sugar-free whipped topping, thawed
  • 1/4 cup reserved graham cracker crumb mixture

Instructions

  1. Prepare the crust: Combine the sugar-free graham cracker crumbs, melted butter, and granulated sugar-free sweetener in a medium bowl. Reserve 1/4 cup of the crumb mixture for the topping. Press the remaining mixture firmly into the bottom of a 9×9-inch baking dish. Refrigerate while preparing the other layers.
  2. Cook the blueberry filling: Add the blueberries, water, granulated sugar-free sweetener, and cornstarch to a small saucepan. Cook over medium heat, stirring frequently, until the blueberries release their juices and the mixture thickens into a glossy sauce. Remove from the heat and stir in the lemon juice. Let cool completely.
  3. Make the cream cheese filling: Beat the softened cream cheese, powdered sugar-free sweetener, and vanilla extract in a large bowl until smooth and creamy. Gently fold in 8 ounces of thawed sugar-free whipped topping until light and fluffy.
  4. Add the cream cheese layer: Spread the cream cheese mixture evenly over the chilled crust, smoothing the surface with a spatula.
  5. Layer the blueberries: Once the blueberry mixture has cooled completely, spread it gently over the cream cheese filling.
  6. Finish the topping: Spread the remaining 8 ounces of sugar-free whipped topping evenly over the blueberry layer. Sprinkle the reserved graham cracker crumbs over the top.
  7. Chill the dessert: Cover and refrigerate for at least 2 hours, or preferably overnight, to allow the layers to set.
  8. Slice and serve: Cut into squares with a sharp knife, wiping the blade between cuts for neat slices. Serve chilled.
