Cinnamon Crumb Crust

  • 1 1/2 cups sugar-free graham cracker crumbs
  • 1/2 tsp ground cinnamon
  • 6 tbsp butter, melted

Cream Cheese Layer

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar-free sweetener
  • 8 oz sugar-free whipped topping, thawed

Blueberry Layer

  • 2 cups fresh or frozen blueberries
  • 1/4 cup water
  • 1/4 cup granulated sugar-free sweetener
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice

Instructions

  • Mix the sugar-free graham cracker crumbs and cinnamon in a bowl.
  • Add the melted butter and stir until the crumbs are evenly moistened. Reserve 2 tablespoons of the crumb mixture for topping.
  • Press the remaining crumb mixture firmly into the bottom of a 9×9-inch baking dish. Refrigerate while preparing the other layers.
  • Add the blueberries, water, granulated sugar-free sweetener, and cornstarch to a saucepan.
  • Cook over medium heat, stirring frequently, until the blueberry mixture thickens.
  • Remove from the heat and stir in the lemon juice. Allow the blueberry mixture to cool completely.
  • Beat the softened cream cheese and powdered sugar-free sweetener until smooth.
  • Add the sugar-free whipped topping and beat until light and fluffy.
  • Spread half of the cream cheese mixture evenly over the chilled crust.
  • Spoon the cooled blueberry mixture evenly over the cream cheese layer.
  • Spread the remaining cream cheese mixture over the blueberries.
  • Sprinkle the reserved crumb mixture over the top.
  • Cover and refrigerate for at least 4 hours, preferably overnight.
  • Slice into squares and serve chilled. Garnish with additional blueberries or fresh mint, if desired.

Notes

  • Cool the blueberry mixture completely before assembling to prevent it from melting the cheesecake layer.
  • Use softened cream cheese for the smoothest filling.
  • For the cleanest slices, refrigerate overnight.
  • Press the crust firmly into the pan so it holds together when sliced.
  • Stir the blueberry mixture frequently while cooking to prevent sticking or burning.
