Perfect for chocolate lovers, low-sugar lifestyles, and anyone craving an easy homemade dessert!

Ingredients

Scale

For the Cake Layer:

  • 2 cups all-purpose flour (or low-carb baking flour blend)
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup granulated sugar-free sweetener (allulose or monk fruit blend)
  • ¼ cup unsweetened cocoa powder
  • 1 cup whole milk (or unsweetened almond milk)
  • ½ cup unsalted butter, melted
  • 1 teaspoon pure vanilla extract

For the Chocolate Topping and Sauce:

  • ½ cup packed brown sugar-free sweetener
  • ¼ cup unsweetened cocoa powder
  • 1¼ cups very hot water

Instructions

1. Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish with cooking spray or melted butter.

2. Mix the Dry Ingredients: In a medium mixing bowl, whisk together the flour, baking powder, salt, granulated sugar-free sweetener, and cocoa powder until evenly combined.

3. Prepare the Batter: Add the milk, melted butter, and vanilla extract. Stir until a thick, smooth chocolate batter forms.

4. Spread the Batter: Transfer the chocolate batter into the prepared baking dish and spread it evenly across the bottom.

5. Prepare the Topping: In a separate small bowl, combine the brown sugar-free sweetener and cocoa powder. Mix well.

6. Layer the Topping: Sprinkle the cocoa-sweetener mixture evenly over the chocolate batter. Do not stir.

7. Add Hot Water: Carefully pour the very hot water evenly over the topping. Do not stir or mix. This step creates the signature self-saucing chocolate layer.

8. Bake: Place the dish in the preheated oven and bake for 40–45 minutes, or until the cake layer is set on top while the chocolate sauce remains gooey underneath.

9. Cool Slightly: Remove from the oven and allow the cobbler to rest for 10–15 minutes so the chocolate sauce can thicken.

10. Serve: Spoon the warm chocolate cobbler into serving bowls, making sure to scoop up plenty of rich chocolate sauce. Enjoy!

Notes

  • Choose the Right Sweetener: Allulose is an excellent choice because it dissolves smoothly and creates a lovely fudgy texture. Monk fruit blends also work well, but check their sweetness ratios.
  • Don’t Stir the Layers: Once you add the cocoa topping and hot water, leave everything undisturbed. This is essential for creating the signature self-saucing effect.
  • Use Very Hot Water: Water just below boiling temperature helps the sauce develop properly.
  • Let It Rest: Allowing the cobbler to cool for 10–15 minutes helps the chocolate sauce thicken while keeping the dessert deliciously gooey.
  • Serving Suggestion: Serve warm with sugar-free vanilla ice cream, whipped cream, or fresh raspberries.
  • Storage: Refrigerate leftovers in an airtight container for 3–4 days.
  • Reheating: Microwave individual portions for 20–30 seconds or until warmed through.
  • Make It Dairy-Free: Substitute unsweetened almond milk and plant-based butter.
  • Make It Gluten-Free: Use a suitable 1:1 gluten-free baking flour blend.
