Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, whisk together the flour, granulated sugar-free sweetener, baking powder, and salt.
  3. Add the milk, eggs, melted butter, and vanilla extract. Stir gently just until combined. Do not overmix; a few small lumps are fine.
  4. Spread the batter evenly into the prepared baking dish.
  5. In a small bowl, combine the softened butter, brown-style sugar-free sweetener, cinnamon, and flour. Mix until a smooth, spreadable paste forms.
  6. Drop small spoonfuls of the cinnamon mixture over the cake batter.
  7. Use a knife to make a few gentle swirls through the batter. Avoid over-swirl­ing so distinct cinnamon pockets remain.
  8. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  9. While the cake cools slightly, whisk together the powdered sugar-free sweetener, milk, and vanilla until smooth. Add milk gradually as needed to reach a thick but drizzleable consistency.
  10. Drizzle the glaze over the warm cake.
  11. Let the cake cool slightly, then slice and serve warm or at room temperature.
