Description

A creamy, nostalgic no-bake dessert made with a buttery sugar-free graham cracker crust, fluffy cream cheese filling, and sweet cherry pie topping. This easy cherry delight is perfect for holidays, potlucks, family gatherings, and make-ahead desserts.

Sugar-Free Crust

  • 7 tbsp unsalted butter, melted
  • 1 1/2 cups sugar-free graham cracker crumbs
  • 3 tbsp granulated sugar-free sweetener, such as erythritol or allulose

Sugar-Free Filling

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar-free sweetener
  • 1 tsp pure vanilla extract
  • 1 container sugar-free whipped topping, thawed
  • 1 can sugar-free cherry pie filling

Optional Add-Ins

  • 1/4 cup chopped pecans or walnuts
  • 1 tsp almond extract, in place of vanilla extract

Instructions

  • Spray an 8×8-inch baking dish with nonstick spray. For easier removal, line the dish with parchment paper, leaving some overhang.
  • Melt the butter in a medium bowl.
  • Add the sugar-free graham cracker crumbs and granulated sugar-free sweetener. Stir until the crumbs are evenly coated.
  • Press the crumb mixture firmly and evenly into the bottom of the prepared dish. Use the bottom of a measuring cup or glass to compact the crust. Set aside.
  • Place the softened cream cheese in a large bowl and beat with a mixer until smooth and lump-free.
  • Add the powdered sugar-free sweetener and vanilla extract. Beat until smooth and creamy.
  • Add the thawed sugar-free whipped topping and mix just until combined. Do not overmix.
  • Spread the cream cheese mixture evenly over the crust, smoothing the surface with an offset spatula or the back of a spoon.
  • Spoon the sugar-free cherry pie filling over the cream cheese layer and gently spread it across the surface.
  • Cover and refrigerate for at least 2 hours. For the firmest texture and cleanest slices, chill overnight.
  • Cut into squares and serve chilled. Refrigerate leftovers promptly.

Notes

  • Use fully softened cream cheese to prevent lumps.
  • Press the crust firmly so the squares hold together when sliced.
  • Mix the whipped topping into the cream cheese mixture only until combined to keep the filling light and fluffy.
