Ingredients
Scale
Sugar-Free Crust
- 7 tbsp unsalted butter, melted
- 1 1/2 cups sugar-free graham cracker crumbs
- 3 tbsp granulated sugar-free sweetener, such as erythritol or allulose
Sugar-Free Filling
- 8 oz cream cheese, softened
- 1 cup powdered sugar-free sweetener
- 1 tsp pure vanilla extract
- 1 container sugar-free whipped topping, thawed
- 1 can sugar-free cherry pie filling
Optional Add-Ins
- 1/4 cup chopped pecans or walnuts
- 1 tsp almond extract, in place of vanilla extract
Instructions
- Spray an 8×8-inch baking dish with nonstick spray. For easier removal, line the dish with parchment paper, leaving some overhang.
- Melt the butter in a medium bowl.
- Add the sugar-free graham cracker crumbs and granulated sugar-free sweetener. Stir until the crumbs are evenly coated.
- Press the crumb mixture firmly and evenly into the bottom of the prepared dish. Use the bottom of a measuring cup or glass to compact the crust. Set aside.
- Place the softened cream cheese in a large bowl and beat with a mixer until smooth and lump-free.
- Add the powdered sugar-free sweetener and vanilla extract. Beat until smooth and creamy.
- Add the thawed sugar-free whipped topping and mix just until combined. Do not overmix.
- Spread the cream cheese mixture evenly over the crust, smoothing the surface with an offset spatula or the back of a spoon.
- Spoon the sugar-free cherry pie filling over the cream cheese layer and gently spread it across the surface.
- Cover and refrigerate for at least 2 hours. For the firmest texture and cleanest slices, chill overnight.
- Cut into squares and serve chilled. Refrigerate leftovers promptly.
Notes
- Use fully softened cream cheese to prevent lumps.
- Press the crust firmly so the squares hold together when sliced.
- Mix the whipped topping into the cream cheese mixture only until combined to keep the filling light and fluffy.
- Chill overnight when possible for the best texture and cleanest slices.
- For a cherry-almond variation, replace the vanilla with 1 tsp almond extract.
- Add chopped pecans or walnuts to the crust for extra crunch.
- Sugar-free blueberry, strawberry, or raspberry pie filling can be substituted for the cherry topping.
- To serve a crowd, double the recipe and prepare it in a 9×13-inch baking dish.
- Store covered in the refrigerator for up to 3 days.
