Description

This Sugar-Free Coconut Bake is a soft, warm Caribbean-style bread made with coconut milk and grated coconut. It has a tender, slightly chewy crumb, a lightly golden crust, and a rich tropical coconut flavor without regular sugar. Perfect for breakfast, snacks, or alongside savory dishes, this homemade coconut bake is delicious served warm with butter, cheese, eggs, avocado, or your favorite sugar-free topping.

For the Dough

  • 3 1/2 cups all-purpose flour (or almond flour for a lower-carb version)
  • 1 3/4 teaspoons instant yeast
  • 3/4 cup freshly grated coconut or unsweetened frozen grated coconut
  • 1 teaspoon salt
  • 4 tablespoons softened butter or coconut oil
  • 1 1/4 cups warm coconut milk (110–120°F / 43–49°C)
  • 2 teaspoons granulated sugar-free sweetener, such as erythritol or monk fruit

  • 1 tablespoon melted butter, for brushing
  • Extra grated coconut, for sprinkling

Instructions

  • Prepare the yeast: Add the warm coconut milk, 1 teaspoon of the sugar-free sweetener, and yeast to a small bowl. Stir and let stand for about 5 minutes, until bubbly and foamy.
  • Combine the dry ingredients: In a large mixing bowl, combine the flour, remaining sugar-free sweetener, salt, softened butter, and grated coconut.
  • Make the dough: Slowly add the yeast mixture to the flour mixture while mixing. Knead with a dough hook on medium speed for about 5 minutes. Add a little flour if the dough is too sticky or a splash of coconut milk if it is too dry. The finished dough should be soft, smooth, and elastic.
  • First rise: Place the dough in a lightly oiled bowl, turning once to coat. Cover and let rise in a warm place for about 30 minutes, or until nearly doubled in size.
  • Shape the bake: Punch down the dough and transfer it to a greased baking pan. Shape or roll it into a 12-inch circle about 1/2 to 3/4 inch thick. Prick the surface several times with a fork to help prevent large air bubbles.
  • Second rise: Cover the shaped dough and let it rest in a warm place for 15–20 minutes, until slightly puffed.
  • Bake: Preheat the oven to 375°F (190°C). Bake for 20–25 minutes, or until lightly golden and the bread sounds hollow when tapped.
  • Finish: If desired, brush the hot bread with melted butter and sprinkle with extra grated coconut.
  • Serve: Remove from the pan and serve warm with butter, cheese, eggs, avocado, savory toppings, or sugar-free jam.

Notes

  • Fresh coconut milk and freshly grated coconut provide the best flavor, but canned coconut milk and unsweetened frozen coconut work well.
  • Use coconut milk warmed to 110–120°F so it is warm enough for the yeast without being too hot.
  • Add flour or coconut milk gradually while kneading to achieve a soft, elastic dough.
  • In warm climates, the dough may rise faster, so judge the rise by the dough’s size rather than the clock.
  • If the dough is sticky, lightly oil your hands rather than adding excessive flour.
  • For a vegan version, replace the butter with coconut oil.
  • For extra flavor, add 1 teaspoon vanilla extract or 1/4 teaspoon ground cardamom.
  • For savory coconut bread, reduce the sweetener to 1 teaspoon and add herbs, cheese, or cooked bacon.
  • For a lower-carb version, almond flour can be used, although the resulting bread will be denser and more cake-like.
  • Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days. Reheat gently before serving.
  • The baked bread can be frozen for up to 2 months. Thaw at room temperature and reheat before serving.
