Ingredients
Scale
Chocolate Mousse
- 2 cups full-fat cottage cheese
- 1/4 cup unsweetened cocoa powder
- 2–4 tablespoons powdered sugar-free sweetener, to taste
- 1/2 teaspoon vanilla extract, optional
- Pinch of salt, optional
- 1–2 teaspoons unsweetened almond milk, only if needed for blending
Optional Toppings
- Sugar-free whipped cream
- Fresh raspberries or strawberries
- Unsweetened coconut flakes
- Chopped walnuts, pecans, or almonds
- Sugar-free dark chocolate shavings
Instructions
- Add the cottage cheese, unsweetened cocoa powder, powdered sugar-free sweetener, vanilla extract, and salt to a high-speed blender or food processor.
- Blend until completely smooth and creamy. Stop to scrape down the sides as needed, then blend again until no cottage cheese curds remain.
- If the mixture is too thick to blend, add 1–2 teaspoons of unsweetened almond milk and blend again.
- Taste the mousse and add more sugar-free sweetener if desired. Blend briefly to combine.
- Divide the mousse between 2 serving cups or small dessert bowls.
- Cover and refrigerate for at least 1 hour. For the thickest texture, chill overnight.
- Before serving, add your favorite toppings such as sugar-free whipped cream, fresh berries, chopped nuts, coconut flakes, or sugar-free dark chocolate shavings.
- Serve chilled.
Notes
- Use full-fat cottage cheese for the creamiest texture, although low-fat cottage cheese can also be used.
- Blend thoroughly to eliminate any visible cottage cheese curds and create a silky-smooth mousse.
- Add the sweetener gradually and adjust according to your preferred level of sweetness.
- Dark unsweetened cocoa powder can provide a deeper, more intense chocolate flavor.
- Chill for at least 1 hour before serving; overnight chilling produces an especially thick texture.
- For a chocolate peanut butter variation, blend in 1–2 tablespoons of sugar-free peanut butter.
- For chocolate mint mousse, add 1/4 teaspoon peppermint extract.
- For a mocha version, add 1/2 teaspoon instant espresso powder.
- Store covered in the refrigerator for up to 3 days.
- The mousse can be frozen for up to 1 month. Thaw in the refrigerator before serving.
- For a dairy-free variation, use a suitable dairy-free cottage cheese alternative or coconut cream, noting that the nutrition information will change.
