  • Author: chef Jennifer
  • Total Time: 4 minutes
  • Yield: 1 mug cake 1x

Description

A warm, soft, and gooey cinnamon roll-inspired mug cake made with cottage cheese, egg, almond flour or oat flour, vanilla, cinnamon, and a sugar-free sweetener. This easy single-serving treat is ready in just a few minutes, making it perfect for breakfast, an afternoon snack, or a quick dessert without the work of making traditional cinnamon roll dough.

Ingredients

Scale

Mug Cake

  • 1/4 cup cottage cheese
  • 1 large egg
  • 2 tablespoons almond flour or oat flour
  • 1 tablespoon sugar-free maple-style syrup, or 12 tablespoons allulose or monk fruit sweetener
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • Pinch of salt

Gooey Cinnamon Center

  • 1 teaspoon sugar-free maple-style syrup or allulose syrup
  • 1/4 teaspoon ground cinnamon

Optional Topping

  • 1 tablespoon plain Greek yogurt or softened cream cheese
  • Sugar-free sweetener, to taste
  • Pinch of cinnamon

Instructions

  • For the smoothest texture, blend the cottage cheese until creamy.
  • Add the cottage cheese, egg, almond flour or oat flour, sugar-free syrup or sweetener, vanilla, cinnamon, baking powder, and salt to a microwave-safe mug. Stir until smooth and well combined.
  • In a small bowl, combine the sugar-free syrup with 1/4 teaspoon cinnamon to make the cinnamon center.
  • Spoon the cinnamon mixture into the center of the batter and gently swirl it with a toothpick or spoon. Avoid overmixing so the cinnamon remains in a gooey ribbon.
  • Microwave on high for 60–90 seconds. Start with 60 seconds, then continue in 10-second bursts if the center is still wet.
  • Remove when the top is set and slightly puffed while the center remains soft. Let the mug cake rest for 1 minute.
  • For the optional topping, mix Greek yogurt or softened cream cheese with sugar-free sweetener until smooth.
  • Spoon the topping over the warm mug cake and sprinkle with cinnamon, if desired. Serve immediately.

Notes

  • Use a mug that holds at least 12 ounces to prevent the cake from overflowing.
  • Start with the shortest microwave time because overcooking can make the cake dry or rubbery.
  • Blending the cottage cheese creates an especially smooth, creamy texture.
  • Almond flour keeps the recipe lower in carbohydrates, while oat flour gives the cake a slightly denser, more traditional snack-cake texture.
  • Add a pinch of nutmeg for extra warmth or chopped pecans for crunch.
  • A few sugar-free chocolate chips can be added for a chocolate-cinnamon variation.
  • Cream cheese makes the topping taste more like traditional cinnamon roll frosting, while Greek yogurt provides a lighter, tangier finish.
  • The cake is best enjoyed warm, immediately after the 1-minute resting period.
