Instructions
- For the smoothest texture, blend the cottage cheese until creamy.
- Add the cottage cheese, egg, almond flour or oat flour, sugar-free syrup or sweetener, vanilla, cinnamon, baking powder, and salt to a microwave-safe mug. Stir until smooth and well combined.
- In a small bowl, combine the sugar-free syrup with 1/4 teaspoon cinnamon to make the cinnamon center.
- Spoon the cinnamon mixture into the center of the batter and gently swirl it with a toothpick or spoon. Avoid overmixing so the cinnamon remains in a gooey ribbon.
- Microwave on high for 60–90 seconds. Start with 60 seconds, then continue in 10-second bursts if the center is still wet.
- Remove when the top is set and slightly puffed while the center remains soft. Let the mug cake rest for 1 minute.
- For the optional topping, mix Greek yogurt or softened cream cheese with sugar-free sweetener until smooth.
- Spoon the topping over the warm mug cake and sprinkle with cinnamon, if desired. Serve immediately.
