Description

A rich, creamy baked rice pudding made with tender cooked rice, sugar-free condensed milk, milk, eggs, cinnamon, nutmeg, and vanilla. This comforting dessert has a lightly golden top and velvety custard center, with optional raisins for a classic touch. It can be served warm, at room temperature, or chilled for a firmer texture.

  • 2 cups cooked white rice, cooled
  • 2 large eggs
  • 1 cup milk
  • 1 can (approximately 14 oz) sugar-free condensed milk
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup unsweetened raisins, optional
  • 1 tbsp unsalted butter, for greasing

Instructions

  • Preheat the oven to 375°F (190°C). Grease an 8×8-inch baking dish with the unsalted butter.
  • In a large bowl, whisk together the eggs, milk, sugar-free condensed milk, cinnamon, nutmeg, vanilla extract, and salt until smooth and well combined.
  • Stir in the cooled cooked rice and optional raisins. Mix gently until the rice is evenly distributed.
  • Pour the mixture into the prepared baking dish and spread it evenly.
  • Bake for 45–50 minutes, or until the edges are lightly golden and the center is mostly set with a slight wobble.
  • Remove from the oven and let the pudding rest for 15–20 minutes. The custard will continue to set as it cools.
  • Sprinkle with additional cinnamon or nutmeg, if desired, and serve warm, at room temperature, or chilled.

Notes

  • Use fully cooked and cooled white rice for the best texture.
  • Avoid overbaking. The center should still have a slight wobble when removed from the oven.
  • Let the pudding rest for 15–20 minutes before serving so the custard can finish setting.
  • Raisins are optional and can be omitted.
  • For a citrus variation, add a little finely grated orange zest to the custard.
  • For a firmer pudding, refrigerate overnight before serving.
  • Store covered in the refrigerator for up to 4 days.
  • To reheat, warm individual portions gently in the microwave. Add a small splash of milk if the chilled pudding has become too firm.
