A rich, creamy baked rice pudding made with tender cooked rice, sugar-free condensed milk, milk, eggs, cinnamon, nutmeg, and vanilla. - 2 cups cooked white rice, cooled
- 2 large eggs
- 1 cup milk
- 1 can (approximately 14 oz) sugar-free condensed milk
- 1/2 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/4 cup unsweetened raisins, optional
- 1 tbsp unsalted butter, for greasing
Instructions
- Preheat the oven to 375°F (190°C). Grease an 8×8-inch baking dish with the unsalted butter.
- In a large bowl, whisk together the eggs, milk, sugar-free condensed milk, cinnamon, nutmeg, vanilla extract, and salt until smooth and well combined.
- Stir in the cooled cooked rice and optional raisins. Mix gently until the rice is evenly distributed.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 45–50 minutes, or until the edges are lightly golden and the center is mostly set with a slight wobble.
- Remove from the oven and let the pudding rest for 15–20 minutes. The custard will continue to set as it cools.
- Sprinkle with additional cinnamon or nutmeg, if desired, and serve warm, at room temperature, or chilled.
