Sugar-Free Creamy Apple Custard Impossible Pie

  • Author: chef Jennifer
  • Total Time: 70 minutes, plus cooling time
  • Yield: 1 9-inch pie 1x

Description

This Sugar-Free Creamy Apple Custard Impossible Pie combines tender cinnamon-spiced apples with a creamy, vanilla custard filling and a soft golden top. There’s no separate pastry crust to prepare—the apples go directly into the pie dish before the simple batter is poured over them. It’s an easy, comforting fall dessert for family dinners, holiday gatherings, or a cozy evening at home.

Ingredients

Scale

Apple Layer

  • 2 medium apples, peeled, cored, and thinly sliced (Granny Smith or Gala)
  • 1/4 cup granulated sugar-free sweetener, such as an erythritol or allulose blend
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 2 tablespoons water

Custard Batter

  • 4 large eggs
  • 1/4 cup granulated sugar-free sweetener, such as an erythritol or allulose blend
  • 1/2 cup all-purpose flour or a low-carb baking flour blend
  • 1/4 cup unsalted butter, melted
  • 2 cups whole milk or unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt

Optional Topping

  • 2 tablespoons sugar-free whipped topping or prepared whipped cream
  • Pinch of ground cinnamon, for dusting

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9-inch pie dish.
  • In a bowl, toss the sliced apples with the 1/4 cup sweetener, cinnamon, nutmeg, lemon juice, and water.
  • Arrange the seasoned apple slices evenly across the bottom of the prepared pie dish.
  • In a separate bowl, whisk the eggs and remaining 1/4 cup sweetener until smooth.
  • Add the melted butter, milk, and vanilla extract. Whisk until well combined.
  • Add the flour, baking powder, and salt. Stir just until incorporated; do not overmix.
  • Pour the batter evenly over the apples.
  • Bake for 50–60 minutes, or until the top is golden brown and a knife inserted near the center comes out mostly clean.
  • Remove from the oven and let the pie cool completely on a wire rack before slicing.
  • Serve plain or top individual slices with a small spoonful of sugar-free whipped topping and a light dusting of cinnamon.

Notes

  • No crust required: The apples are arranged directly in the greased pie dish, and the batter is poured over them.
  • Sweetener clarification: This version uses 1/2 cup total sugar-free sweetener—1/4 cup for the apples and 1/4 cup for the batter—to match the preparation instructions.
  • Apple tip: Slice the apples thinly and evenly so they cook consistently.
  • Don’t overmix: Stir the batter only until the flour is incorporated for the best texture.
  • Cooling is important: Let the pie cool completely before slicing so the custard can set.
  • Ingredient substitutions: Whole milk, almond milk, all-purpose flour, and low-carb flour blends may produce different textures. For consistent results, use the same products each time.
  • Texture: The finished pie is intended to have a soft, custard-like center rather than the firm crumb of a traditional apple cake. Distinctly separated layers are not guaranteed, especially when substitutions are used.
  • Storage: Cover and refrigerate leftovers for up to 3 days.
  • Serving suggestion: Serve individual slices with sugar-free whipped topping and a light sprinkle of cinnamon.
  • Sugar-free note: The recipe uses sugar-free sweetener instead of regular granulated sugar, but this does not guarantee that the finished pie contains zero sugar, is keto-friendly, or will not affect blood glucose.
