Blueberry Topping

  • 1/3 cup granulated sugar-free sweetener
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water

Instructions

  • Preheat the oven to 350°F (175°C).
  • Make the crust by combining the almond flour, chopped pecans, softened butter, and granulated sugar-free sweetener in a bowl.
  • Press the crust mixture firmly and evenly into the bottom of a 9×13-inch baking dish.
  • Bake for 12–15 minutes, or until the crust is lightly golden. Remove from the oven and let it cool completely.
  • Meanwhile, prepare the blueberry topping. Add the blueberries, 1/4 cup water, granulated sugar-free sweetener, and lemon juice to a saucepan over medium heat.
  • Cook for 5–7 minutes, stirring occasionally, until the blueberries soften and release their juices.
  • In a small bowl, whisk the cornstarch with 2 tablespoons cold water until smooth.
  • Stir the cornstarch mixture into the blueberries. Cook for another 1–2 minutes, stirring, until the mixture thickens.
  • Remove the blueberry topping from the heat and let it cool completely. It will continue to thicken as it cools.
  • To make the filling, beat the softened cream cheese in a large bowl until smooth and creamy.
  • Add the powdered sugar-free sweetener, vanilla extract, and cold milk. Beat until smooth, well combined, and fluffy.
  • Gently fold in the sugar-free whipped topping until the filling is light and smooth. Avoid overmixing.
  • Spread the cream cheese filling evenly over the completely cooled crust.
  • Spoon the completely cooled blueberry topping evenly over the cream cheese layer.
  • Cover the dish and refrigerate for at least 4 hours, preferably overnight, until firm and set.
  • Before serving, garnish with sugar-free whipped topping, fresh blueberries, and chopped pecans if desired.
  • Cut into squares and serve chilled.

  • Cool the crust completely before adding the cream cheese filling to prevent the filling from becoming soft.
  • Allow the blueberry topping to cool completely before spreading it over the filling.
