Instructions
- Add the egg and sugar-free sweetener to a large microwave-safe mug.
- Whisk thoroughly until the egg and sweetener are well combined.
- Add the unsweetened cocoa powder for a chocolate version, or almond flour for a vanilla-style version.
- Stir until the batter is smooth and no dry spots remain. Add vanilla extract if desired.
- Microwave on high for 40 to 60 seconds. Start with 40 seconds, then continue in short 5- to 10-second bursts if needed.
- Remove when the top is set but the center is still slightly soft. Avoid overcooking, as the cake can quickly become dry or rubbery.
- Let the mug cake rest for 1 minute.
- Top with sugar-free whipped cream, berries, or sugar-free chocolate chips, if desired, and serve warm.

- Use a large microwave-safe mug to prevent the batter from overflowing as it rises.
