  • 2 tablespoons unsweetened cocoa powder or almond flour
  • 2 tablespoons granulated sugar-free sweetener, such as allulose, monk fruit blend, or erythritol
  • Optional: 1/2 teaspoon vanilla extract
  • Optional toppings: sugar-free whipped cream, fresh berries, or sugar-free chocolate chips

Instructions

  • Add the egg and sugar-free sweetener to a large microwave-safe mug.
  • Whisk thoroughly until the egg and sweetener are well combined.
  • Add the unsweetened cocoa powder for a chocolate version, or almond flour for a vanilla-style version.
  • Stir until the batter is smooth and no dry spots remain. Add vanilla extract if desired.
  • Microwave on high for 40 to 60 seconds. Start with 40 seconds, then continue in short 5- to 10-second bursts if needed.
  • Remove when the top is set but the center is still slightly soft. Avoid overcooking, as the cake can quickly become dry or rubbery.
  • Let the mug cake rest for 1 minute.
  • Top with sugar-free whipped cream, berries, or sugar-free chocolate chips, if desired, and serve warm.

Notes

  • Use a large microwave-safe mug to prevent the batter from overflowing as it rises.
  • Start with 40 seconds of microwave time because microwave power varies. Add additional time in short bursts only when necessary.
  • Do not overcook the cake. The center should remain slightly soft when it comes out of the microwave.
  • The chocolate version has a richer cocoa flavor and slightly fudgy texture, while the almond flour version is softer and mildly nutty.
  • For a more traditional vanilla flavor, add 1/2 teaspoon vanilla extract.
  • A pinch of cinnamon pairs especially well with the almond flour version.
  • This mug cake is best eaten warm and fresh because its texture becomes firmer as it cools.
  • For a sugar-free dessert, make sure toppings such as whipped cream and chocolate chips are also labeled sugar-free.
