Ingredients
Scale
Peach Layer
- 2 cans sliced peaches in natural juice, approximately 15 oz each
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 tablespoon cornstarch, optional, for a thicker filling
Cake Topping
- 1 box sugar-free yellow or vanilla cake mix
- 3/4 cup unsalted butter, melted or thinly sliced
- 1/4 cup chopped pecans, optional
- 1/2 teaspoon ground cinnamon, optional
Instructions
- Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- Pour the peaches and their natural juice into the prepared baking dish.
- Add the vanilla extract and 1 teaspoon of cinnamon. Stir gently to combine.
- If using cornstarch, mix it with 2 tablespoons of peach juice until smooth, then stir it into the peach mixture.
- Spread the peach mixture evenly across the bottom of the baking dish.
- Sprinkle the sugar-free cake mix evenly over the peaches. Do not stir the cake mix into the peach layer.
- Pour the melted butter evenly over the cake mix. Alternatively, arrange thin slices of butter across the surface, covering as much of the cake mix as possible.
- Sprinkle the chopped pecans and additional cinnamon over the top, if using.
- Bake for 40–50 minutes, or until the topping is golden brown and the peaches are bubbling around the edges.
- Remove from the oven and let the dump cake rest for 10–15 minutes so the filling can thicken slightly.
- Serve warm with sugar-free whipped topping or sugar-free vanilla ice cream, if desired.
Notes
- Use peaches packed in natural juice rather than heavy syrup for a lower-sugar version.
- Keep most of the peach juice because it helps create a juicy filling and moist topping.
- Spread the cake mix evenly to prevent dry or powdery patches.
- Melted butter generally provides more even coverage, while thinly sliced butter can also be used.
- Let the dump cake rest for 10–15 minutes before serving for easier scooping.
- Pecans are optional and can be omitted for a nut-free version.
- For extra spice, add a pinch of ground nutmeg.
- Add 1 cup of fresh or frozen blueberries or raspberries for a fruity variation.
- Serve warm with sugar-free whipped cream or sugar-free vanilla ice cream.
- Refrigerate leftovers covered for up to 3 days.
- Reheat in the oven for a crispier topping or use the microwave for individual portions.
- The assembled dessert can be frozen for up to 2 months after cooling completely and covering well.
- Nutrition is approximate and will vary depending on the brands of cake mix, peaches, butter, and optional toppings used.
