Ingredients
Scale
- 1 cup + 2 tablespoons all-purpose flour
- 3/4 cup granulated sugar-free sweetener
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 2/3 cup milk or unsweetened almond milk
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter, melted
- 1 1/2 cups coarsely chopped pecans
- 1 cup brown sugar-free sweetener
- 1/2 cup unsalted butter, cubed
- 1 1/2 cups boiling water
- 1 teaspoon vanilla extract
- Sugar-free vanilla ice cream, optional, for serving
Instructions
- Preheat the oven to 350°F.
- Place the cubed 1/2 cup butter in a 9×13-inch baking dish. Place the dish in the oven for 3–5 minutes, until the butter is melted. Carefully remove it from the oven.
- In a medium bowl, whisk together the flour, granulated sugar-free sweetener, baking powder, and salt.
- Add the milk, 1 teaspoon vanilla extract, and melted 1/2 cup butter. Stir just until a smooth, pourable batter forms.
- Pour the batter evenly over the melted butter in the baking dish. Do not stir.
- Sprinkle the chopped pecans evenly over the batter.
- Sprinkle the brown sugar-free sweetener evenly over the pecans.
- Stir the remaining 1 teaspoon vanilla extract into the boiling water.
- Slowly pour the hot vanilla water evenly over the entire cobbler. Do not stir.
- Bake uncovered for 30–35 minutes, or until the top is golden and cake-like.
- Remove from the oven and let the cobbler rest for at least 15 minutes so the caramel-style sauce can thicken.
- Serve warm with sugar-free vanilla ice cream or sugar-free whipped cream, if desired.
Notes
- Do not stir the layers: Keeping the butter, batter, pecans, sweetener, and boiling water layered is essential for creating the cake-like topping and gooey sauce.
- Use boiling water: The hot water helps create the caramel-style sauce as the cobbler bakes.
- Let it rest: Allow the cobbler to cool for at least 15 minutes before serving for a thicker sauce and easier scooping.
- Milk options: Dairy milk creates a richer cobbler, while unsweetened almond milk works well for a lighter or dairy-free batter.
- Gluten-free option: Substitute a 1:1 gluten-free baking flour blend designed for cakes and other baked goods.
- Flavor variation: Add a pinch of cinnamon to the batter for extra warmth.
- Storage: Cover and refrigerate leftovers for up to 3 days. Reheat gently in a 300°F oven for about 10 minutes or microwave individual servings.
- Serving suggestion: Serve warm with sugar-free vanilla ice cream, whipped cream, or Greek yogurt.
