Sugar-Free Almond Crust:

  • 1 1/2 cups almond flour
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar-free sweetener
  • 1 pinch salt

Lemon Custard Cake:

  • 4 large eggs, separated
  • 1/2 cup granulated sugar-free sweetener
  • 1/2 cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon zest
  • 1/3 cup fresh lemon juice
  • 1 cup almond flour
  • 1 1/2 cups unsweetened almond milk
  • 1 pinch salt

  • Powdered sugar-free sweetener
  • Lemon slices
  • Fresh lemon zest
  • Small fresh mint leaves

Instructions

  • Preheat the oven to 325°F (165°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  • Make the crust. Combine the almond flour, melted butter, granulated sugar-free sweetener, and salt until evenly moistened.
  • Press the crust mixture firmly and evenly into the bottom of the prepared pan. Use the bottom of a measuring cup to compact it.
  • Bake the crust for 8 to 10 minutes, then remove from the oven and allow it to cool slightly.
  • Make the lemon batter. In a large bowl, beat the egg yolks and granulated sugar-free sweetener until pale and smooth.
  • Add the melted and cooled butter, vanilla extract, lemon zest, and fresh lemon juice. Mix until well combined.
  • Add the almond flour and salt, then gradually whisk in the almond milk until the batter is smooth and fairly thin.
  • Whip the egg whites. In a separate clean bowl, beat the egg whites until soft peaks form.
  • Gently fold the whipped egg whites into the lemon batter in 2 to 3 additions. Do not overmix; a few light streaks of egg white are fine.
  • Pour the batter over the partially cooled crust and spread gently if needed.
  • Bake for 45 to 55 minutes, or until the top is lightly golden and the center still has a gentle wobble.
  • Remove from the oven and let the cake cool completely in the pan.
  • Refrigerate for at least 2 hours, or until thoroughly chilled and set.
  • Lift the chilled cake from the pan using the parchment paper. Dust lightly with powdered sugar-free sweetener and garnish with lemon slices, fresh zest, or mint, if desired.
  • Slice into 9 squares and serve chilled.

Notes

  • Use room-temperature eggs for better volume when whipping the egg whites.
  • Separate the eggs carefully; even a small amount of yolk can prevent the whites from whipping properly.
  • Fold the egg whites gently to preserve the airy cake layer.
  • Do not overbake. The center should still have a gentle wobble when the cake comes out of the oven and will continue to set as it cools.
  • Chill for at least 2 hours for the best custard texture and cleanest slices.
  • Fresh lemon juice and zest provide the brightest flavor.
  • Allulose, monk fruit, erythritol blends, or another baking-friendly sugar-free sweetener may be used, but sweetness and texture can vary by brand.
  • For variations, add 1 to 2 tablespoons poppy seeds, or top with fresh blueberries or raspberries.
  • For a dairy-free version, use dairy-free butter and a suitable dairy-free milk.
  • Store covered in the refrigerator for up to 4 days.
  • The untopped cake can be frozen for up to 2 months. Thaw overnight in the refrigerator before serving.
