Instructions

  • Preheat the oven to 350°F (175°C).
  • Pour the melted butter into a 9×13-inch baking dish and spread it evenly over the bottom. Do not stir or mix it with anything else.
  • In a medium bowl, whisk together the flour, baking powder, salt, and sugar-free sweetener.
  • Gradually add the milk, vanilla extract, and fresh lemon zest. Stir just until a smooth batter forms. Avoid overmixing.
  • Pour the batter directly over the melted butter. Do not stir the layers together.
  • Spoon the sugar-free lemon pie filling evenly over the top of the batter. Do not mix.
  • Bake for 40 to 45 minutes, or until the top is golden brown and the edges are bubbling.
  • Remove from the oven and let the cobbler rest for 10 to 15 minutes. This allows the lemon filling to thicken slightly.
