Ingredients
Scale
- 4 tbsp almond flour
- 1½–2 tbsp granulated sugar-free sweetener, such as allulose, monk fruit, or erythritol
- ¼ tsp baking powder
- Pinch of salt
- 3 tbsp milk or unsweetened almond milk
- 1 tbsp melted butter or neutral oil
- ¼ tsp vanilla extract
- 2–3 tbsp fresh or frozen blueberries
- Optional: sugar-free yogurt, sugar-free whipped cream, extra blueberries, or unsweetened shredded coconut
Instructions
- Lightly grease a microwave-safe 10–12-ounce mug with butter, oil, or nonstick spray.
- Add the almond flour, sugar-free sweetener, baking powder, and salt. Stir until evenly combined.
- Add the milk, melted butter or oil, and vanilla extract. Stir gently until a smooth, thick batter forms. Avoid overmixing.
- Gently fold in the blueberries, taking care not to crush them. Add a few extra blueberries on top if desired.
- Microwave on high for 60–90 seconds, checking after 60 seconds.
- Continue microwaving in 10–15 second bursts if needed, until the top is set but the cake is still soft and moist.
- Carefully remove the mug and let the cake rest for 1–2 minutes.
- Serve warm with sugar-free yogurt, whipped cream, extra blueberries, or unsweetened shredded coconut.
Notes
- Fresh or frozen blueberries can be used. Add frozen berries directly without thawing.
- Start with 60 seconds of microwave cooking and add time gradually to prevent a dry or rubbery cake.
- Use a wide 10–12-ounce microwave-safe mug to allow the cake to rise without overflowing.
- For extra flavor, add a pinch of cinnamon or a little lemon zest.
- For variations, try raspberries, chopped almonds or pecans, unsweetened coconut, or sugar-free chocolate chips.
- This recipe is sugar-free but not carbohydrate-free because blueberries naturally contain carbohydrates and sugars.
- Nutrition is approximate and will vary according to the milk, fat, sweetener, blueberries, and toppings used.
