  • ¼ tsp baking powder
  • Pinch of salt
  • 3 tbsp milk or unsweetened almond milk
  • 1 tbsp melted butter or neutral oil
  • ¼ tsp vanilla extract
  • 23 tbsp fresh or frozen blueberries
  • Optional: sugar-free yogurt, sugar-free whipped cream, extra blueberries, or unsweetened shredded coconut

Instructions

  • Lightly grease a microwave-safe 10–12-ounce mug with butter, oil, or nonstick spray.
  • Add the almond flour, sugar-free sweetener, baking powder, and salt. Stir until evenly combined.
  • Add the milk, melted butter or oil, and vanilla extract. Stir gently until a smooth, thick batter forms. Avoid overmixing.
  • Gently fold in the blueberries, taking care not to crush them. Add a few extra blueberries on top if desired.
  • Microwave on high for 60–90 seconds, checking after 60 seconds.
  • Continue microwaving in 10–15 second bursts if needed, until the top is set but the cake is still soft and moist.
  • Carefully remove the mug and let the cake rest for 1–2 minutes.
  • Serve warm with sugar-free yogurt, whipped cream, extra blueberries, or unsweetened shredded coconut.

Notes

  • Fresh or frozen blueberries can be used. Add frozen berries directly without thawing.
  • Start with 60 seconds of microwave cooking and add time gradually to prevent a dry or rubbery cake.
