This Sugar-Free Microwave Chocolate Mug Cake is a quick, rich, and fudgy single-serving dessert made in just minutes. Instructions
- Lightly grease a microwave-safe mug that holds at least 10 ounces.
- Add the almond flour, cocoa powder, sugar-free sweetener, baking powder, and salt to the mug. Stir until evenly combined. Sift the cocoa powder first if it is lumpy.
- Add the egg, almond milk, melted butter or oil, and vanilla extract. Stir just until a smooth batter forms, making sure to scrape the bottom and sides of the mug.
- If using, place the sugar-free chocolate chips in the center of the batter and gently press them down so they are covered.
- Microwave on high for 50 to 70 seconds. Start checking at 50 seconds. The top should be set while the center remains slightly soft.
- If the center is still too wet, microwave in additional 5- to 10-second bursts until the cake is just set. Avoid overcooking.
- Let the mug cake rest for 1 minute before serving.
- Top with sugar-free whipped cream, unsweetened cocoa powder, sugar-free chocolate shavings, or fresh berries, if desired.
- Serve warm directly from the mug.
