Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C).
  2. Prepare the crust: Combine the sugar-free chocolate cookie crumbs and melted butter in a mixing bowl. Stir until the crumbs are evenly moistened.
  3. Shape and bake the crust: Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake for 8–10 minutes, then remove from the oven and allow the crust to cool completely.
  4. Make the cream cheese filling: Beat the softened cream cheese, powdered sugar-free sweetener, and vanilla extract until smooth and creamy. Gently fold in 1 cup of thawed sugar-free whipped topping.
  5. Add the cream cheese layer: Spread the cream cheese mixture evenly over the cooled cookie crust, taking care not to disturb the crust.
  6. Prepare the chocolate pudding: Whisk the sugar-free instant chocolate pudding mix with cold milk, following the package directions for the selected milk. Continue whisking until the mixture begins to thicken.
