  • 14 to 16 oz crushed pineapple, very well drained
  • 1 tbsp fresh lemon juice, optional
  • 1/2 cup pineapple chunks, well drained, optional for topping
  • 1/2 cup unsweetened shredded coconut, optional
  • Extra sugar-free whipped topping, optional

Instructions

  • In a medium bowl, combine the sugar-free graham cracker crumbs, granulated sugar-free sweetener, and melted butter until evenly moistened.
  • Press the crust mixture firmly into the bottom of an 8×8-inch baking dish. Refrigerate while preparing the filling.
  • Beat the softened cream cheese until completely smooth.
  • Add the powdered sugar-free sweetener and vanilla extract. Beat until creamy and lump-free.
  • Gently fold in the thawed sugar-free whipped topping until light and fluffy. Avoid overmixing.
  • Fold in the very well-drained crushed pineapple and lemon juice, if using.
  • Spread the pineapple cream filling evenly over the chilled crust and smooth the top with a spatula.
  • Sprinkle with unsweetened shredded coconut and add well-drained pineapple chunks, if desired.
  • Cover and refrigerate for at least 4 hours, or preferably overnight, until firm.
  • Slice while cold and serve with additional sugar-free whipped topping, toasted coconut, or pineapple if desired.
