Instructions
- In a medium bowl, combine the sugar-free graham cracker crumbs, granulated sugar-free sweetener, and melted butter until evenly moistened.
- Press the crust mixture firmly into the bottom of an 8×8-inch baking dish. Refrigerate while preparing the filling.
- Beat the softened cream cheese until completely smooth.
- Add the powdered sugar-free sweetener and vanilla extract. Beat until creamy and lump-free.
- Gently fold in the thawed sugar-free whipped topping until light and fluffy. Avoid overmixing.
- Fold in the very well-drained crushed pineapple and lemon juice, if using.
