Instructions

  • Make the strawberry topping: Add the finely chopped strawberries, sugar-free sweetener, lemon juice, cornstarch, and water to a small saucepan.
  • Cook over medium heat for 5–7 minutes, stirring frequently, until the strawberries soften and the mixture becomes thick and glossy.
  • Remove from the heat and let the strawberry mixture cool completely.
  • Stir the sliced strawberries into the cooled strawberry mixture.
  • Make the crust: Combine the sugar-free graham cracker crumbs, melted butter, sugar-free sweetener, and vanilla extract in a mixing bowl. Stir until evenly moistened.
  • Press the crumb mixture firmly into the bottom of an 8 × 8-inch baking dish. Refrigerate while preparing the filling.
  • Make the cheesecake filling: Beat the softened cream cheese, powdered sugar-free sweetener, vanilla extract, and lemon juice until smooth and creamy.
  • Gently fold in the sugar-free whipped topping until light, fluffy, and fully combined.
  • Spread the cheesecake filling evenly over the chilled crust.
  • Assemble: Spoon the completely cooled strawberry topping over the cheesecake layer and gently spread it into an even layer.
  • Garnish with additional sliced strawberries, sugar-free whipped topping, or graham cracker crumbs if desired.
