- 6 tablespoons unsalted butter, melted
- 2 tablespoons granulated sugar-free sweetener
- 1/2 teaspoon vanilla extract (optional)
Sugar-Free Cheesecake Filling
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar-free sweetener
- 1 teaspoon vanilla extract
- 1 1/2 cups sugar-free whipped topping, thawed
- 1 tablespoon lemon juice (optional)
Sugar-Free Strawberry Topping
- 3 cups fresh strawberries, hulled and sliced
- 1 cup fresh strawberries, finely chopped
- 1/3 cup granulated sugar-free sweetener
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1/4 cup water
Optional Garnish
- Extra sliced strawberries
- Sugar-free whipped topping
- Reserved sugar-free graham cracker crumbs
Instructions
- Make the strawberry topping: Add the finely chopped strawberries, sugar-free sweetener, lemon juice, cornstarch, and water to a small saucepan.
- Cook over medium heat for 5–7 minutes, stirring frequently, until the strawberries soften and the mixture becomes thick and glossy.
- Remove from the heat and let the strawberry mixture cool completely.
- Stir the sliced strawberries into the cooled strawberry mixture.
- Make the crust: Combine the sugar-free graham cracker crumbs, melted butter, sugar-free sweetener, and vanilla extract in a mixing bowl. Stir until evenly moistened.
- Press the crumb mixture firmly into the bottom of an 8 × 8-inch baking dish. Refrigerate while preparing the filling.
- Make the cheesecake filling: Beat the softened cream cheese, powdered sugar-free sweetener, vanilla extract, and lemon juice until smooth and creamy.
- Gently fold in the sugar-free whipped topping until light, fluffy, and fully combined.
- Spread the cheesecake filling evenly over the chilled crust.
- Assemble: Spoon the completely cooled strawberry topping over the cheesecake layer and gently spread it into an even layer.
- Garnish with additional sliced strawberries, sugar-free whipped topping, or graham cracker crumbs if desired.
- Cover and refrigerate for at least 2 hours. For the firmest texture and cleanest slices, chill for 4 hours or overnight.
- Slice into 9 squares and serve chilled.
Notes
- Let the strawberry topping cool completely before spreading it over the cheesecake filling.
- Pat strawberries dry after washing to prevent excess moisture from making the dessert watery.
- Use softened cream cheese for the smoothest, lump-free filling.
- Press the crust firmly into the baking dish so it holds together when sliced.
- Chill for at least 2 hours; 4 hours or overnight gives the best texture.
- Add fresh strawberry slices shortly before serving for the brightest presentation.
- For a mixed-berry version, replace some of the strawberries with blueberries, raspberries, or blackberries.
- Add 1 teaspoon lemon zest to the filling for extra citrus brightness.
- For a dairy-free version, use dairy-free cream cheese, coconut whipped topping, and dairy-free graham cracker crumbs.
- Freeze the dessert without the strawberry topping for up to 2 months. Thaw in the refrigerator, then add the topping before serving.
- Store covered in the refrigerator for up to 3 days.
