Ingredients
Sugar-Free Crust:
- 2 cups sugar-free graham cracker crumbs

Strawberry Layer:

- 1/2 of the prepared vanilla cheesecake filling
- 3 tbsp freeze-dried strawberries, finely crushed
- 1 cup finely chopped strawberries
Sugar-Free Whipped Topping:
- 1 cup cold heavy whipping cream
- 2 tbsp powdered sugar-free sweetener
- 1/2 tsp vanilla extract
- Optional: crushed freeze-dried strawberries and sliced strawberries for garnish
Instructions
- Make the crust: Combine the sugar-free graham cracker crumbs, melted butter, and granulated sugar-free sweetener in a bowl. Stir until evenly moistened.
- Press the crust: Firmly press the crumb mixture into the bottom of a 9×9-inch baking dish. Use the bottom of a measuring cup or glass to compact the crust evenly. Refrigerate while preparing the remaining layers.
- Prepare the strawberries: Wash, hull, and thoroughly dry the strawberries. Finely chop 1 cup for the strawberry cheesecake layer and set aside. Slice the remaining strawberries lengthwise.

- Make the cheesecake filling: In a separate bowl, beat the softened cream cheese, powdered sugar-free sweetener, vanilla extract, and lemon juice until smooth and creamy.
- Combine the filling: Gently fold the whipped cream into the cream cheese mixture until light, fluffy, and fully combined.
- Divide the filling: Divide the cheesecake filling evenly between two bowls. Leave one bowl plain for the vanilla cheesecake layer.
- Make the strawberry cheesecake layer: Add the crushed freeze-dried strawberries and 1 cup finely chopped strawberries to the second bowl. Fold gently until evenly combined and lightly pink.
- Assemble: Arrange the sliced strawberries evenly over the chilled crust.
- Add the vanilla layer: Carefully spread the plain vanilla cheesecake filling over the strawberry layer.
- Add the strawberry layer: Spread the strawberry cheesecake mixture evenly over the vanilla cheesecake layer.
- Chill: Cover and refrigerate for at least 4 to 6 hours, or preferably overnight, until the layers are firm and set.
- Make the whipped topping: Just before serving, beat the cold heavy whipping cream, powdered sugar-free sweetener, and vanilla extract until stiff peaks form.
- Finish: Spread or pipe the whipped topping over the chilled dessert. Garnish with additional sliced strawberries and crushed freeze-dried strawberries, if desired.
- Serve: For cleaner slices, place the dessert in the freezer for 15 to 20 minutes before cutting. Slice into squares and serve chilled.
