Sugar-Free Lemon Dessert

Instructions

  • Preheat the oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  • In a large bowl, whisk together the almond flour, coconut flour, granulated sugar-free sweetener, baking powder, baking soda, and salt.
  • Add the eggs, melted butter, Greek yogurt, fresh lemon juice, lemon zest, and vanilla extract.
  • Mix until the batter is smooth and fully combined. Avoid overmixing, as this can make the dessert dense.
  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 25–30 minutes, or until lightly golden and a toothpick inserted into the center comes out clean. The dessert should be set but still moist.
  • Let it cool in the pan for 15–20 minutes. For cleaner slices, allow it to cool completely.
  • If using the glaze, whisk the powdered sugar-free sweetener with 1 tablespoon of lemon juice. Add more lemon juice for a thinner glaze or more powdered sweetener for a thicker glaze.
  • Drizzle the glaze over the cooled dessert and sprinkle with additional lemon zest, if desired.
  • Slice and serve chilled or at room temperature.
