Perfect for Thanksgiving, fall gatherings, holiday parties, and family celebrations, these chilled dessert squares are made with sugar-free sweeteners for a delicious treat without added sugar from traditional granulated sugar.

Ingredients

Scale

For the Pecan Crust

  • 1 cup almond flour
  • 1/2 cup butter, softened
  • 3/4 cup chopped pecans
  • 2 tablespoons granulated sugar-free sweetener

For the Cream Cheese Layer

  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar-free sweetener
  • 1 teaspoon vanilla extract
  • 1 cup sugar-free whipped topping, thawed

For the Pumpkin Pudding Layer

  • 2 1/2 cups cold milk, adjusted as needed according to the pudding package instructions
  • 3 boxes sugar-free instant vanilla pudding mix
  • 1 can plain pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1 cup sugar-free whipped topping, thawed

For the Whipped Topping

  • 1 cup sugar-free whipped topping, thawed
  • 1/4 cup chopped pecans, for garnish

Instructions

  1. Prepare the oven and pan: Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking dish.
  2. Make the pecan crust: Combine the almond flour, softened butter, chopped pecans, and granulated sugar-free sweetener in a bowl. Mix until crumbly and evenly combined. Press firmly into the bottom of the prepared baking dish.
  3. Bake the crust: Bake for 15 minutes, or until lightly golden. Remove from the oven and let the crust cool completely.
  4. Prepare the cream cheese layer: Beat the softened cream cheese until smooth. Add the powdered sugar-free sweetener and vanilla extract, then beat until creamy. Gently fold in 1 cup of thawed sugar-free whipped topping.
  5. Layer the cream cheese filling: Spread the cream cheese mixture evenly over the completely cooled crust, smoothing the surface with a spatula.
  6. Make the pumpkin pudding layer: In a large bowl, whisk together the cold milk, sugar-free instant vanilla pudding mix, pumpkin puree, and pumpkin pie spice until smooth and thick. Follow the pudding package instructions for the appropriate amount of milk and mixing time.
  7. Fold in the whipped topping: Gently fold 1 cup of thawed sugar-free whipped topping into the pumpkin pudding mixture until combined.
  8. Add the pumpkin layer: Carefully spread the pumpkin mixture over the cream cheese layer. Use small spoonfuls to distribute it evenly before smoothing the surface.
  9. Finish with whipped topping: Spread the remaining 1 cup of sugar-free whipped topping over the pumpkin layer. Sprinkle the chopped pecans evenly over the top.
  10. Chill and serve: Cover the dish and refrigerate for at least 3 hours, preferably overnight, until the layers are firm. Cut into squares and serve chilled.

Notes

  • Use plain pumpkin puree rather than sweetened pumpkin pie filling.
  • Let the crust cool completely before adding the cream cheese layer.
  • If the pumpkin puree appears watery, drain it briefly before mixing.
  • Adjust the milk according to the specific pudding mix instructions to ensure the pumpkin layer sets properly.
  • Fold the whipped topping gently to maintain a light, fluffy texture.
  • Refrigerate for at least 3 hours; overnight chilling produces firmer layers and cleaner slices.
  • For neat squares, warm and dry the knife between cuts.
  • Store covered in the refrigerator for up to 3 days. Freezing is not recommended because the cream cheese and whipped topping may change texture after thawing.
  • For a stronger pumpkin flavor, add an extra 1/2 teaspoon of pumpkin pie spice.
  • To serve at parties, assemble the layers in individual dessert cups for convenient portions.
  • For a genuinely sugar-free result, check the labels of all ingredients, including the whipped topping, pudding mix, and sweeteners.
