Coconut-Pecan Topping

- 1/3 cup sugar-free brown sweetener
- 1/2 cup heavy whipping cream
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1 cup unsweetened shredded coconut
- 1/4 cup chopped pecans
Instructions
- Prepare the crust: Preheat the oven to 350°F (175°C). Mix the almond flour, cocoa powder, granulated sugar-free sweetener, and melted butter until well combined.
- Press the mixture firmly and evenly into a 9-inch pie dish.
- Bake the crust for 10 minutes. Remove from the oven and allow it to cool completely.
- Bloom the gelatin: Sprinkle the gelatin over the cold water and let it stand for 5 minutes.
- Make the chocolate filling: Melt the sugar-free dark chocolate and butter together until smooth. Set aside.
- In a saucepan, whisk together the heavy whipping cream, half-and-half, egg yolks, and granulated sugar-free sweetener.
- Cook over medium-low heat, stirring constantly, until the mixture thickens slightly. Do not allow it to boil.
- Remove the saucepan from the heat. Stir in the melted chocolate and butter, bloomed gelatin, and vanilla extract until smooth.
- Pour the chocolate filling into the completely cooled crust. Refrigerate for 2 to 3 hours, or until the filling is firm.
- Make the coconut-pecan topping: Add the butter, sugar-free brown sweetener, heavy whipping cream, and egg yolks to a saucepan.
- Cook over medium-low heat, stirring constantly, until the mixture thickens. Do not boil.
- Remove from the heat and stir in the vanilla extract, unsweetened shredded coconut, and chopped pecans.
- Allow the topping to cool slightly, then gently spread it over the chilled chocolate filling.
- Cover the pie and refrigerate for at least 4 hours, preferably overnight.
- Slice and serve chilled. Garnish with additional toasted coconut or chopped pecans, if desired.
Notes
- Use unsweetened shredded coconut to keep the pie sugar-free and lower in carbohydrates.
- Allow the chocolate filling to set completely before adding the coconut-pecan topping.
- Chill overnight for the firmest texture and cleanest slices.
- Always bloom the gelatin in cold water before adding it to the filling.
- Stir the filling and topping constantly while cooking to help prevent curdling or scorching.
- Allow the coconut-pecan topping to cool slightly before spreading it over the chocolate layer.
- Store the covered pie in the refrigerator for up to 4 days.
- For make-ahead preparation, prepare the pie the day before and refrigerate until ready to serve.
- The untopped pie can be frozen for up to 2 months. Thaw it in the refrigerator before adding the topping.
- Pecans can be replaced with walnuts.
- For a mocha variation, add 1/2 teaspoon instant espresso powder to the chocolate filling.
- For a bourbon-inspired variation, add 1/2 teaspoon bourbon extract to the filling.
- For a dairy-free version, use dairy-free butter, coconut cream, and dairy-free sugar-free chocolate.
- A pinch of sea salt over the finished topping adds a pleasant sweet-and-salty contrast.
- If using regular sugar instead of sugar-free sweeteners, adjust the amount to taste.
