Description

This creamy Sugar-Free Rice Pudding is a simple, comforting dessert made with cooked rice, milk, sugar-free sweetener, cinnamon, and vanilla.   • 3 cups unsweetened milk or unsweetened almond milk
  • 1/3 cup granulated sugar-free sweetener
  • 2 tablespoons powdered sugar-free sweetener
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter
  • 1/4 cup raisins, optional

Optional Toppings:

  • Extra ground cinnamon
  • Sugar-free whipped topping
  • Toasted unsweetened coconut

Instructions

  • Add the milk, cooked rice, granulated sweetener, powdered sweetener, cinnamon, and salt to a medium saucepan.
  • Cook over medium-low heat, stirring frequently, for 20–25 minutes, or until the rice pudding thickens and becomes creamy. Avoid boiling the milk.
  • Remove the saucepan from the heat and stir in the butter and vanilla extract until the butter has completely melted.
  • If using raisins, stir them into the pudding. Return the saucepan to low heat for 1–2 minutes, just until the raisins soften.
  • Let the pudding rest for a few minutes. It will continue to thicken as it cools.
  • Spoon the rice pudding into six serving bowls or dessert cups.
  • Serve warm, or refrigerate for about 2 hours for a thicker, chilled pudding.
  • Garnish with extra cinnamon, sugar-free whipped topping, or toasted unsweetened coconut, if desired.

Notes

  • Stir frequently while cooking to prevent the milk and rice from sticking or scorching.
  • The pudding will thicken considerably as it cools. Stir in a splash of milk if it becomes too thick.
  • Sugar-free sweeteners vary in sweetness, so adjust the amount according to the product you use and your preferred sweetness.
  • For a dairy-free version, use unsweetened almond milk and a dairy-free butter alternative.
  • Raisins are optional but add natural sugar and carbohydrates, so omit them for a lower-carb version.
  • A pinch of nutmeg, toasted coconut, or lemon or orange zest can add extra flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freezing is not recommended because the pudding may become watery or grainy after thawing.
  • Although this recipe is sugar-free, it contains white rice and therefore is not necessarily suitable for a strict keto diet.
