Ingredients
Scale
- 1 cup cooked white rice, preferably short-grain
- 3 cups unsweetened milk or unsweetened almond milk
- 1/3 cup granulated sugar-free sweetener
- 2 tablespoons powdered sugar-free sweetener
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 tablespoon unsalted butter
- 1/4 cup raisins, optional
Optional Toppings:
- Extra ground cinnamon
- Sugar-free whipped topping
- Toasted unsweetened coconut
Instructions
- Add the milk, cooked rice, granulated sweetener, powdered sweetener, cinnamon, and salt to a medium saucepan.
- Cook over medium-low heat, stirring frequently, for 20–25 minutes, or until the rice pudding thickens and becomes creamy. Avoid boiling the milk.
- Remove the saucepan from the heat and stir in the butter and vanilla extract until the butter has completely melted.
- If using raisins, stir them into the pudding. Return the saucepan to low heat for 1–2 minutes, just until the raisins soften.
- Let the pudding rest for a few minutes. It will continue to thicken as it cools.
- Spoon the rice pudding into six serving bowls or dessert cups.
- Serve warm, or refrigerate for about 2 hours for a thicker, chilled pudding.
- Garnish with extra cinnamon, sugar-free whipped topping, or toasted unsweetened coconut, if desired.
