Ingredients

Scale

Cookie Crumb Crust

  • 1 1/2 cups sugar-free shortbread cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons granulated sugar-free sweetener

Reserve 1/4 cup of the combined crust mixture for the topping.

Cream Cheese Layer

  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar-free sweetener
  • 8 ounces sugar-free whipped topping, thawed

Strawberry Layer

  • 2 cups fresh strawberries, diced
  • 1/4 cup water
  • 1/4 cup granulated sugar-free sweetener
  • 1 tablespoon cornstarch
  • 1 teaspoon fresh lemon juice

Top Layer

  • 8 ounces sugar-free whipped topping, thawed
  • Reserved 1/4 cup crust crumb mixture
  • Optional: fresh sliced strawberries for garnish

Instructions

  • Prepare the Crust: Combine the sugar-free shortbread cookie crumbs, melted butter, and granulated sugar-free sweetener in a mixing bowl. Stir until the crumbs are evenly moistened. Reserve 1/4 cup of the mixture for the topping. Press the remaining mixture firmly into the bottom of a 9×13-inch baking dish. Refrigerate while preparing the other layers.
  • Cook the Strawberry Layer: Combine the diced strawberries, water, granulated sweetener, and cornstarch in a saucepan. Cook over medium heat, stirring frequently, until the mixture thickens. Remove from the heat and stir in the lemon juice. Allow the strawberry mixture to cool completely before assembling the dessert.
  • Make the Cream Cheese Filling: Beat the softened cream cheese and powdered sugar-free sweetener until smooth and creamy. Gently fold in 8 ounces of thawed sugar-free whipped topping until evenly combined.
  • Add the Cream Cheese Layer: Spread the cream cheese mixture evenly over the chilled cookie crust, smoothing it gently with a spatula.
  • Layer the Strawberries: Spoon the completely cooled strawberry mixture over the cream cheese filling, spreading it evenly to cover the surface.
  • Add the Whipped Topping: Spread the remaining 8 ounces of thawed sugar-free whipped topping over the strawberry layer.
  • Finish With Crumbs: Sprinkle the reserved 1/4 cup crust crumb mixture evenly over the whipped topping. Do not add extra cookie crumbs unless desired.
  • Chill the Dessert: Cover the baking dish and refrigerate for at least 2 hours. For a firmer texture and cleaner slices, refrigerate overnight.
  • Slice and Serve: Cut into 12 squares and serve chilled. Add fresh sliced strawberries as an optional garnish just before serving.

Notes

  • For the best texture: Refrigerate overnight to help the layers set and make slicing easier.
  • Use softened cream cheese: Room-temperature cream cheese blends more smoothly and helps prevent lumps.
  • Cool the strawberries completely: Warm strawberry filling can soften the cream cheese layer and melt the whipped topping.
  • Reserve the crumbs first: Measure out the 1/4 cup topping portion before pressing the remaining crust mixture into the dish.
  • Make it ahead: Assemble the dessert the day before serving and keep it covered in the refrigerator.
  • Customize the sweetness: Choose a sugar-free sweetener suited to your taste and follow any brand-specific conversion guidance.
  • Garnish just before serving: Add fresh strawberry slices shortly before serving for the best appearance.
  • Storage: Keep covered in the refrigerator and follow the storage guidance for the dairy and whipped topping products used.
  • Dietary note: Check the ingredient labels of the cookies, whipped topping, and sweeteners if you have specific dietary requirements. The recipe has not been verified as keto-friendly or suitable for people with diabetes.
