Ingredients

Scale

For the Chocolate Crust

  • 1 ½ cups sugar-free chocolate cookie or graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar-free sweetener, such as allulose or monk fruit

For the Cream Cheese Filling

  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar-free sweetener
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, cold

For the Turtle Layers and Topping

  • ¾ cup sugar-free caramel sauce, divided
  • ½ cup sugar-free dark chocolate chips, divided
  • ½ cup chopped pecans, toasted and divided

Instructions

  1. Prepare the crust: In a medium bowl, combine the chocolate cookie crumbs, melted butter, and granulated sugar-free sweetener. Mix until evenly moistened. Press firmly into the bottom and up the sides of a 9-inch pie dish. Refrigerate for at least 30 minutes.
  2. Make the cream cheese filling: Beat the softened cream cheese, powdered sugar-free sweetener, and vanilla extract with an electric mixer until smooth and creamy.
  3. Whip the cream: In a separate chilled bowl, beat the cold heavy whipping cream until stiff peaks form.
  4. Combine the filling: Gently fold the whipped cream into the cream cheese mixture using a spatula until fully incorporated and fluffy.
  5. Add the first layer: Spread half of the cream cheese filling evenly over the chilled crust. Drizzle with ¼ cup of sugar-free caramel sauce and sprinkle with half of the toasted pecans and chocolate chips.
  6. Finish assembling: Carefully spread the remaining cream cheese filling over the first layer. Drizzle the remaining ½ cup of caramel sauce over the top and finish with the remaining pecans and chocolate chips.
  7. Chill the pie: Refrigerate for at least 4 hours, or preferably overnight, until the filling is firm enough to slice.
  8. Slice and serve: Cut into wedges using a sharp knife. For cleaner slices, wipe the knife between cuts. Serve chilled.

Notes

  • Toast the pecans: Toast chopped pecans in a dry skillet over medium-low heat for 3–4 minutes, stirring frequently, until fragrant. Cool before adding them to the pie.
  • Smooth caramel drizzle: If the caramel sauce is too thick, warm it briefly for 5–10 seconds in the microwave, then stir before drizzling.
  • Use powdered sweetener: Powdered sugar-free sweetener helps create a smooth filling without a grainy texture.
  • Allow enough chilling time: Refrigerate for at least 4 hours for the best texture and clean slices.
  • Storage: Cover and refrigerate leftovers for 4–5 days.
  • Freezing: Freeze for up to 1 month in an airtight, freezer-safe container. Thaw in the refrigerator before serving, or enjoy slightly frozen for a firmer dessert.
  • Variations: Use a grain-free chocolate crust for a lower-carb option, or add a pinch of sea salt to the caramel for a salted caramel turtle pie.
  • Sweetener tip: Allulose generally dissolves well, while some monk fruit blends contain erythritol and may produce a slightly different texture. Choose products labeled sugar-free and check their carbohydrate content.
  • Dietary note: This pie contains dairy and pecans and may contain other allergens depending on the cookie crust and packaged ingredients. Sugar-free does not necessarily mean carbohydrate-free.
