Ingredients

Scale

For the Pastry Layers

  • 2 sheets puff pastry, thawed
  • 1 tablespoon granulated sugar-free sweetener, divided

For the Vanilla Custard

  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar-free sweetener, such as allulose or a monk fruit blend
  • 1/3 cup cornstarch
  • 3 large egg yolks
  • 2 teaspoons vanilla extract
  • 2 tablespoons unsalted butter

For the Fresh Fruit Topping

  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 1 cup kiwi, peeled and diced
  • 1/2 cup mandarin orange segments, drained
  • 1 tablespoon fresh lemon juice

Optional Sugar-Free Glaze

  • 1/4 cup sugar-free apricot jam or fruit preserves
  • 1 tablespoon water

Instructions

  1. Bake the Pastry: Preheat the oven to 400°F (200°C). Line two baking sheets with parchment paper. Place one puff pastry sheet on each tray, prick thoroughly with a fork, and sprinkle with the sugar-free sweetener. Bake for 12–15 minutes until golden. Cool completely, then carefully split each sheet horizontally into two thinner layers to make four layers total.
  2. Prepare the Custard Base: In a medium saucepan, heat the milk and heavy cream over medium heat until steaming but not boiling. In a separate heatproof bowl, whisk together the sweetener, cornstarch, egg yolks, and vanilla extract until smooth.
  3. Cook the Vanilla Custard: Slowly whisk about one-third of the hot milk mixture into the egg mixture. Pour everything back into the saucepan and cook over medium-low heat, whisking continuously for 4–6 minutes, until thick and glossy. Remove from the heat and whisk in the butter. Cover the custard surface with plastic wrap and refrigerate until thoroughly chilled.
  4. Prepare the Fruit: Wash and prepare the strawberries, blueberries, kiwi, and mandarin oranges. Gently toss the fruit with the lemon juice, then pat dry with paper towels to remove excess moisture.
  5. Assemble the Pastry Layers: Place the first pastry layer on a serving tray and spread one-third of the chilled custard over it. Repeat with the next two pastry layers, distributing the remaining custard evenly. Finish with the fourth pastry layer on top.
  6. Add the Fruit Topping: Arrange the prepared fruit evenly over the top pastry layer. For an optional glossy finish, warm the sugar-free apricot preserves with the water until smooth, then gently brush over the fruit.
  7. Chill and Serve: Refrigerate the assembled dessert for at least 2 hours. Use a sharp serrated knife to cut into squares or rectangles, wiping the blade between cuts. Serve chilled.

Notes

  • Sweetener: Allulose or a monk fruit blend designed for a 1:1 sugar replacement works well. Sweeteners vary in sweetness and baking performance, so check the manufacturer’s conversion guidance.
  • Pastry texture: Puff pastry contains carbohydrates and may contain added sugar, so check the label if you need a strictly sugar-free product.
  • Prevent soggy layers: Cool the pastry and custard completely before assembly, and pat the fruit dry before arranging it on top.
  • Make ahead: Prepare the custard up to 24 hours in advance and refrigerate with plastic wrap pressed directly against the surface.
  • Storage: Store covered in the refrigerator and enjoy within 2 days for the best texture.
  • Freezing: Not recommended, as the custard and fresh fruit may release moisture during thawing.
  • Serving suggestion: Garnish with fresh mint and serve with unsweetened tea or coffee.
  • Recipe tip: For cleaner slices, chill thoroughly and use a serrated knife with a gentle sawing motion.
