  • 12 tablespoons granulated sugar-free sweetener, preferably baking-friendly
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • 2 tablespoons milk or unsweetened almond milk
  • 1 tablespoon unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon sugar-free sprinkles, optional

Instructions

  • Choose a microwave-safe mug that holds at least 8 ounces. Lightly grease the inside with butter or cooking spray.
  • Add the flour, sugar-free sweetener, baking powder, and salt to the mug. Stir until evenly combined.
  • Add the milk, melted butter, and vanilla extract. Mix thoroughly with a fork, scraping the bottom and sides of the mug until no dry flour remains.
  • Gently fold in the sugar-free sprinkles, if using.
  • Microwave on high for 60–90 seconds. Start with 60 seconds and check the cake. If the center is still wet, continue cooking in 10-second intervals until the top is set and the center is soft but no longer wet.
  • Let the mug cake rest for 1 minute before serving.
  • Serve warm with sugar-free whipped topping, fresh berries, Greek yogurt, or your favorite sugar-free toppings, if desired.

Notes

  • Use a wide mug when possible for more even cooking and to give the cake room to rise.
  • Start with 60 seconds in the microwave and add time gradually. Overcooking can make the cake dry or rubbery.
  • Allulose, monk fruit blends, erythritol blends, or another granulated baking sweetener can be used. Sweetness may vary by brand.
  • Regular sugar can replace the sugar-free sweetener in the same amount, but the recipe will no longer be sugar-free.
  • For a cinnamon-vanilla version, add a pinch of cinnamon to the dry ingredients.
  • Add fresh blueberries, raspberries, or chopped strawberries for a fruity variation.
  • Add sugar-free chocolate chips for a vanilla chocolate-chip mug cake.
  • For a dairy-free version, use unsweetened almond milk and dairy-free butter.
