Description

A quick and cozy single-serve apple mug cake made with almond flour, coconut flour, cinnamon, tender diced apples, and a sugar-free sweetener. Ready in about 5 minutes, this soft and moist microwave dessert is perfect when you want the comforting flavor of apple pie without baking an entire cake.

  • 1 small apple, peeled and finely diced
  • 2 tbsp unsalted butter, melted
  • 1 tbsp unsweetened almond milk
  • 1 tbsp granulated sugar-free sweetener, such as allulose, monk fruit, or erythritol blend
  • 1/4 tsp vanilla extract
  • 3 tbsp almond flour
  • 1 tbsp coconut flour
  • 1/4 tsp baking powder
  • 1/2 tsp ground cinnamon
  • Pinch of salt

Optional Toppings:

  • Sugar-free whipped topping
  • Extra ground cinnamon
  • Chopped pecans

Instructions

  • Add the melted butter, almond milk, sugar-free sweetener, and vanilla extract to a wide, microwave-safe mug. Stir to combine.
  • Add the finely diced apple and stir gently. Keep the apple pieces very small so they soften during the short cooking time.
  • Add the almond flour, coconut flour, baking powder, cinnamon, and salt.
  • Stir gently until the ingredients are evenly combined. The batter should be thick but spoonable. If it seems unusually dry, add a very small splash of almond milk.
  • Microwave on high for 60 to 90 seconds. Begin checking at 60 seconds. The top should be set while the center remains soft and moist.
  • Avoid overcooking, as microwave mug cakes can dry out quickly.
  • Let the mug cake rest for 1 minute before serving.
  • Top with sugar-free whipped topping, extra cinnamon, and/or chopped pecans if desired.

Notes

  • Dice the apple very finely so it becomes tender during the short microwave cooking time.
  • Use a wide microwave-safe mug with enough room for the cake to rise.
  • Start checking the cake at 60 seconds and add cooking time in short increments if needed.
  • Measure coconut flour carefully because it absorbs a significant amount of moisture.
  • A crisp apple works best and helps prevent the mug cake from becoming watery.
  • For an apple-pie flavor, add a tiny pinch of nutmeg along with the cinnamon.
