- 1 tbsp coconut flour
- 1/4 tsp baking powder
- 1/2 tsp ground cinnamon
- Pinch of salt

Instructions
- Add the melted butter, almond milk, sugar-free sweetener, and vanilla extract to a wide, microwave-safe mug. Stir to combine.
- Add the finely diced apple and stir gently. Keep the apple pieces very small so they soften during the short cooking time.
- Add the almond flour, coconut flour, baking powder, cinnamon, and salt.
- Stir gently until the ingredients are evenly combined. The batter should be thick but spoonable. If it seems unusually dry, add a very small splash of almond milk.
- Microwave on high for 60 to 90 seconds. Begin checking at 60 seconds. The top should be set while the center remains soft and moist.
- Avoid overcooking, as microwave mug cakes can dry out quickly.
- Let the mug cake rest for 1 minute before serving.
- Top with sugar-free whipped topping, extra cinnamon, and/or chopped pecans if desired.
