Description

This Vanilla Magic Custard Cake is a soft, creamy dessert that magically bakes into three irresistible layers from one simple batter: a firm cake base, a silky custard center, and a light golden, soufflé-like top. Made with simple pantry ingredients and scented with vanilla, this elegant cake is perfect for afternoon tea, dinner parties, holidays, or any special occasion.

  • 1/2 cup unsalted butter, melted and slightly cooled
  • 2 cups whole milk, lukewarm
  • 1 1/4 cups powdered sugar
  • 4 large eggs, separated
  • 1 tablespoon water
  • 1 cup all-purpose flour
  • 2 teaspoons vanilla extract
  • Powdered sugar, for dusting

Instructions

  • Preheat the oven to 325°F (165°C). Lightly grease an 8×8-inch baking dish and set aside.
  • Add the egg whites to a clean mixing bowl. Beat with an electric mixer until stiff peaks form. Set aside.
  • In a separate large bowl, beat the egg yolks and powdered sugar until pale, creamy, and smooth.
  • Add the melted, slightly cooled butter and water. Beat for about 2 minutes until well combined.
  • Mix in the flour until smooth. The mixture will be thick at this stage.
  • Gradually pour in the lukewarm milk while mixing. Add the vanilla extract and mix until fully combined. The batter will become very thin and liquid-like; this is normal.
  • Gently fold the whipped egg whites into the batter in three additions. Do not overmix. Small pieces of egg white should remain visible in the batter.
  • Pour the batter into the prepared baking dish.
  • Bake for 40–60 minutes, or until the top is lightly golden and the center is still slightly jiggly.
  • If the top begins to brown too quickly, loosely cover the cake with aluminum foil during the final part of baking.
  • Remove from the oven and allow the cake to cool completely in the baking dish. The layers will continue to set as the cake cools.
  • Dust generously with powdered sugar, slice, and serve at room temperature or lightly chilled.

Notes

  • Use lukewarm milk rather than cold milk so the melted butter blends smoothly into the batter.
  • Do not overmix the whipped egg whites. Small pieces of egg white help create the light top layer.
  • The center should remain slightly jiggly when the cake comes out of the oven. Overbaking can make the custard layer too firm.
  • Allow the cake to cool completely before slicing so the three layers have time to set.
  • If the top browns too quickly, loosely cover the cake with foil near the end of baking.
  • For a lemon variation, add 1 tablespoon of fresh lemon zest.
  • For a chocolate version, replace 2 tablespoons of flour with unsweetened cocoa powder.
  • For a mocha variation, add 1 teaspoon of instant espresso powder to the milk.
  • Serve with fresh berries, whipped cream, vanilla ice cream, chocolate sauce, or caramel sauce.
  • Store covered in the refrigerator for up to 3 days.
  • The cake can be frozen without toppings for up to 1 month. Thaw in the refrigerator before serving.
  • Whole milk provides the richest and creamiest texture, although low-fat milk can also be used.
  • A 9×9-inch pan can be used for a thinner cake; baking time may need to be adjusted.
